Over two hours raise in steps to 78 C

I used BIAB with a second water heater set to boiling. Mash in thick, add a couple of litres of boiling water every 15 minutes to raise the temp to next stage. Some gentle heat may be required on mashing vessel
yeast is a combo from a slurry - Mangrove Jacks empire Ale and Tripel yeasts. I used about 800ml of thin slurry. Attentuation hit 90%.
Wort was cubed (stored in plastic bottle) to cool slowly (no chill) Half was decanted to fermented, then the remaining in the bottle was shaken for about 2 minutes to aerate. Easy to shake 10kg than 20!
At writing I'm day 7 of ferment. gravity is 1.009. Will cold crash, fine, keg, bottle and enter to comp. tasting great - I didn't have pilsner malt but figured the slightly more complex ale malt may have worked for a BGS in a simple smash. Seems I was on the money. |

Notes: Spoil 24 oz of Guinness Extra Stout by pouring into a bowl and allowing it to set for a period of 7 days to spoil. Then freeze it. On brew day thaw it out, while you are boiling your beer, put it on the stove and heat to 180 - 190 degrees for 20 minutes to pasteurize. Cool it down to 75 degrees and add it to the batch just before you pitch the yeast. |

Upon first tasting, too bitter. Filtering left a real clean bitterness and cut some of the raw bitterness out of the beer. Reduce early hop additions. 1/2oz FWH would be just fine it seems.I
great aroma, color is a little light and body is lacking complexity. Add some Munich or honey malt.
Phenomenal beer over all, one of my favorites so far!
08JAN15: Malt bill and hop schedule revised to suit the previous statements. Munich 20L, Melanoidan, Carafa II and Chocolate added (1.5LBs, 1LB, .25, and 1 ounces respectively) First wort hop down to .5 ounce citra. 15 minute additions taken to 10 minutes.
BattleStations Lavender IPA Sesh V2
.5 Munich 10L and 1.5lb of honey added along with .35 ounces lavender at f/o. Tincture made 1 pint vodka with 2 ounces lemon peel, 1 oz tangerine peel.
Dry hopped with 1.5 oz cascade and 1.5 oz centennial for 7 days
