This beer is about pushing the boundaries, it is about taking innovation in beer to a whole new level. Dark and decadent, plum, treacle and roast coffee are amplified beyond any stout you've had before. This level of alcohol can be achieved using a domestic freezer. Use a container with a tap close to the bottom so you can run the un-frozen, concentrated beer from under the ice on top. You may have to do this three or four times.

Notes: Mash the grains at 148°F (64°C) for 60 minutes. Sparge at 168°F (75°C), bring to a boil, and boil for 60 minutes, following the hops schedule. Whirlpool and cool to 68°F (20°C) rapidly. Maintain fermentation temperature at 68°F (20°C). Once primary fermentation and diacetyl rest are complete, drop the temperature to 60°F (15°C) and dry hop for 7 days. Don’t use a filter or finings; the beer should finish with a medium haze but shouldn’t be murky. Carbonate to 2.5 vols of CO2. |

Notes: Collected 24L wort. Last runnings were 8 Brix. Pre-boil wort was 14.2 Brix. Forgot Dextose! May have shocked some of the yeast by pouring some beer into hot dextrose. Ended up missing 1075 target by diluting to 1072.
Finished dry in the end, down to 1010 after 2 weeks.
Caustic bitterness. Needs balancing with some crystal and total hopping rates reined in. Came through very American, with the dry hop lost a bit. Perhaps go steadier on the hop stand. I think the utilisation must have been higher than 10% |
