Notes: Get ready to dive into the darkness with the Nighthawk Imperial Black IPA. This beer means business, an incredibly hop forward flavor and aroma attacks your senses from first sip. Using an impressive 9 oz. of hops we blend our favorite American varietals to create and complex and long-lasting hop experience of tropical fruits, orange, and a lemon finish. Pours Midnight Black with an off-white head this brew forgoes the heavy roast and astringency you would expect, instead supporting the hops with a slight roasty chocolate malt backbone to add an entirely new dimension to your new favorite IPA.
Notes:
- Due to the high Original Gravity of this brew we recommend making a yeast starter or purchasing an additional vial of yeast.
- This brew uses a two-stage dry hopping process. After 7 days of primary fermentation you will open your fermentation vessel and add 1 oz. Centennial and 1 oz. Amarillo. After an additional week you will transfer to a secondary and dry hop with 1 oz. Falconers Flight and 1 oz. Amarillo for five (5) days and then keg/bottle your brew.

Notes: -Off white persistent head. Deep red amber color.
- Light dry body, toasty/malt flavor.
-No caramel/sweetness.
- Hops presence is low but crisp aftertaste.
- Moderate carbonation.
- An O-fest yeast can be substituted if you prefer a more malt flavor.
-Adjust the pale chocolate for color & more/less toast flavor.
4-6 weeks lagering balances out the malt and toasty flavors.
Sub 1 lb 2-row and add up to 15% corn, (~1lb) for a "Dos Equis Amber" but I prefer this beer without.

Notes: Sugar is actually inverted local "raw sugar" from the company that supplies local breweries (a lot like turbinado for those who don't live in Aus.)
This is meant to be in the tradition of old commercial Aussie beers, which were actually originally ales, but the Nottingham imparts less ale characteristics and in fact if you ferment below 18C you are unlikely to find anyone who could pick this from a lager in a blind test
I have also used dry enzyme in my latest versions, hence the attenuation adjusted to 95%.

Notes: 90 minute hops are FWH.
Traditional fermentation: Start fermentation at 6℃ and allow to increase to a max of 10℃. Maintain for 5 - 8 days. Once 80% of desired attentuation is achieved start reducing temp by 0.5℃ per day until temp is 4℃. Transfer to keg with spunding valve and place in keezer for at least one month to finish. Hold until fermentation is finished. Transfer to serving keg.
Alternative fermentation: Start fermentation at 6c and allow to rise to a max of 10c. Hold at 10c until close to FG (6-8 days) and then increase to 16-20c for accelerated maturation. Hold until FG is achieved and no diacetyl is present (2-3 days) and then crash to -1c. Transfer to keg and hold at -1 for 1 week. Transfer to serving keg. |

Notes: made 2L starter at 1.020 for both yeasts, left overnight.
DME added in last 10 minutes, likely higher IBUs than the calculator thinks.
Belgian Saison got the overnight mash.
3724 starter smelled beery.
568 started smelled super fruity and delicious.
sampled 3724 after 2.5 days, SG at 1.022, beer tastes good, creamy, sweet, estery, maybe bubble gum or cotton candy? after 9 days, SG at 1.015, not nearly as bubble gummy as it was, TBH, it's a bit worse. after 3 weeks, gravity at 1.007, tastes good, reminds me of hennepin, smell has a bit of not entirely pleasing fermentation character.
sampled 568 after 5 days, refractometer says 6.2 brix, smells a little sulfury, not very good tasting. after 13 days, refractomter says 6.5. smell still maybe sulfury, tastes very good though, very rich in soft, fruity esters. finished at 1.008, some of the fruitiness is gone (should have served it asap?). |
