Notes: Used two packs of Safale American Ale Yeast US-05, pre-hydrated at 75F (boiled distilled water for 10 min with pinch of yeast nutrient, cooled to 75F).
Updated recipe with efficiency actuals. ABV is about 8.0%, had conversion of 88.8%, very high, stayed on the low end of 150sF per recent IPA recommendations in literature. |

The most important thing with this clone recipe will be the fermentation temperature control. Yuengling doesn’t have much in the way of esters or aromas derived from the fermentation, so it’s important that this beer is fermented cool and cold conditioned to keep those yeast characteristics in check. |

Notes: Pull off 1/3 of wort after mash for a 24 hour kettle sour, pre-boil, with home-made sour starter.
Add hops to un-soured portion, bring to a boil, then turn off heat immediately.
Once cooled, rack onto chopped/peeled cucumber in fermenter.
Next day, bring soured portion to a boil, chill and add into fermenter. |
