Notes: This is a clone of Sexual Chocolate by Foothills Brewing Co., as found on TastyBrew.com blog (http://www.tastybrew.com/forum/thread/154676); as the finalized with a few tweeks to the recipe.
1: The blog said to NOT add cocoa powder after trial due to graininess in the final beer and the need to chill and re-rack, but he used 6 oz at secondary, dry. I shall use 3 oz, mixed with 6 oz boiled water that will hopefully moisten the cocoa and reduce graininess in the final product and encourage settling during secondary.
2. I'm going to use homemade chocolate syrup in place of Hershey's Special Dark Chocolate Syrup at kegging.
3. My Homebrew Supply Store did not sell Wyeast anymore; so while the original recipe uses Denny's Favorite 50, the closest strain by White Labs is California V. So, we'll see how this goes! |

Notes: This berliner weisse utilizes un-malted whole (white) wheat berries. They must be crushed and cereal mashed before using. Flaked/rolled wheat can be substituted.
This beer also features a sour-mash. Once the sacc. rest is completed, the mash should be cooled to 120 degrees and a handfull of dry grain added to the tun. 24-36 hours is usually a good rest but taste your wort to judge it's sourness for yourself.
A 15 minute boil is enough to kill off any wild bugs and utilize the hops. Pitch with WY3728 Lambic Blend or a combination of ale yeast and lacto (brett doesn't hurt either). |

Notes: Note:
This is a 3 Stage Infusion Mash. The German name is Hochkurz meaning high temp low time I added a protein rest for the special malt. The Pilsner malt is my base malt it will make a nice light crisp color and taste. The Carapils will add to the head retention of the beer and I added a .5 kg Munich light to offset the Hop notes with a nice light malty taste and a little darker EBC.
To achieve Mash Temps add boiling Water
All Mash times are in Minutes.I have extended the beta sacrification rest to 40 min for a more crisp beer less sweeter beer.
I will use 1 Standard vile of WLP830 Yeast and doing a yeast starter 2 days prior to brew day fermenting between 11 and 12 celcius. The hops will add a nice citrus fruit and Melon smell. I'm going to dry hop in secondary for a better melon citrus aroma.I am boiling for 90 minutes to help with protein break down and head retention. I will be carbonating with DME to keep to Reinheitsgebot. I will be starting with 6 gallons calculating for a 1 gallon boil off. Leaving me with 5 gallons or 20 liters for fermentation. The water profile I have chosen is a light lager Pilsner works well with a German Helles. |
