Notes: My 'goto' recipe for an easy drinking beer. Popular with all drinker types.
Sample Brew-In-A-Bag equipment profile set up for a 15 Gal/50 litre brew pot (diameter of 40cm or 16 inches) using a polyester grain bag to hold the grain. This profile should be used with the BIAB mash profiles available in the BeerSmith mash profiles area. The above assumes loose pellet hops and only clear, chilled wort transferred from the kettle using no trub management techniques. Experienced brewers should adjust 'Loss to Trub and Chiller' and 'Brewhouse Efficiency' accordingly to suit their trub management techniques. |

Notes: Turn off the burner at 45 minutes. Add the Wheat DME. Stir until completely dissolved. Add wort chiller to kettle. Light the burner, return to boil and add the hop addition. Restart timers.
When wort has cooled down to 100 degrees, draw 1/2 cup sample and use to rehydrate the yeast. |

Ferm sched:
Pitch yeast at 64 and let rise to 68 naturally. Hold at 68 until SG is around 1.020 then drop temp back to 64. When SG is 1.011 or so I will drop the temp to 44 degrees and hold for a week or so. Hopefully the diacetyl isn't too crazy. I'm hoping to capture a bit in order to get that tofee/butterscotch thing going, but I'm hoping to stay away from the fake butter. After the 44 degree "lager" I'll keg and transfer the keg straight to the kegerator where I'll carb it and hopefully drink it after a weeks time. Total time from grain to glass should be around 3 weeks.

Next time, I'd drop the chocolate malt down or go for pale chocolate. Wasn't an overpowering taste, but certainly could be dropped. Good session beer. |
