Notes: The yeast was a monster, it went through the yeast in 3 days. It finished at 1.010. The yeast worked so well it moved up my dry hop schedule so I'll be trying thus beer sooner than expected.
At the last minute I decided to add the Hybiscus (that I bought for a Saison). Nelson Sauvin gos to the Rose' side. |

Notes: The American smoked malt is Briess Mesquite smoked.
This batch broke but drinkable (too much sparge water due to valve clog, left easily a gallon of wort in the tun b/c didn't have time for extra-long boil). Aiming for 9%, hit 6% or so, but still good. Anything in the 7-8% range could be sweet spot.
2 packets S-05, pitched at 66F & hold 4 days till activity subsides
Warm to 69F
Day 10: lower mesh bag with oak cubes into primary (weighted & suspended)
Day 40: rack/bottle.

Notes: Brewed on 7/31 no misshaps but i cut water alittle to much and could have used some rice hulls just in case Og:1.072
Xferd on 8\10 gravity 1.008 or 8.4% atten=88% tasted great noce banana esters...and saved yeast for washing.
Bottled on 8.22 with 2 oz corn sugar 2 oz cane.. extremly clear FG:1.006 tasted good with bubblegumm and belgine esters slight acelaldehyde and fusel alcohol .8.66% 91%AA. |
