Originally intended 200g flaked rye, but couldn't get it on time.
Step mash:
58C 90min
70C 30min
Add 10g-12g crushed coriander seeds at flameout. Also, 5-8g crushed grains of paradise.
Cool to 16C and pitch T-58. Aerate at:

Keep rousing yeast by swirling, as often as possible.
Counting time from pitch, raise temperature by 0.8C every 12h, stop raising at 29C.
When raising to ~21C, pitch WLP099 from a large decanted starter.
After reaching 29C, keep at 29C until fermentation ends. WLP099 is slow!

Notes: This is a quick easy (DME) experiment using Meridian hops. I had a Meridian pale ale and was very surprised! Meridian gives a nice smooth juicy lemon flavor.
In the hop listing add .15 Citra & .15 Meridian at 0 min flame out for aroma and flavor. Let it Hopstand (I used whirlpool for lack of option) for 10 if sanitary for some IBUs. Otherwise this is a great Pale Ale too.
After fermentation (give it 2 weeks) dry hop with .20 Citra + .20 Meridian for another 3-5 days.
Transfer to secondary and cold crash (if you can) for a day or two before priming and bottling. |

Notes: The recipe is a modified version of "Raucous Red Ale" from The Brew-Master's Bible. It now includes partial mashing and a malt substitution to include leftover ingredients.
I decided to shy away from the traditional American ingredients (Crystal, Carapils, etc.) and use Belgian specialty malts to provide the caramel flavoring base. The Gold LME will be split between two additions to keep the color as light as possible. The Belgian Special B and Aromatic malts will provide the dark amber color. The balanced blend of malts and hops should create a robust final product. |
