REHYDRERING for at gjæra ikke skal få sukkersjokk.
Kok opp ca 0,5 liter vann og avkjøl til 26 til 30 gr. (Arbeidsområde for M29 gjæra). (For kaldt vann kan gi temperatursjokk og drepe mange gjærceller.)
Desinfiser alt med Starsan, og dryss tørrgjæra oppå vannet og la stå ca 15 til 30 minutter uten å ha rørt i den, med alufolie over. Rør litt før du skal pitche den i forkulturen.
FORKULTUR
2 ølsett inneholdt tilsammen 4 pakker tørrgjær. Et raskt overslag viser at 4 pakker er akkurat litt lite. Etter utmesk tapper vi av 1,5 til 2 liter vørter i erlenmeyerkolben (sterilisert). Vørteren er pasteurisert, og trenger strengt tatt ikke varmes opp, men om du fyller på litt kokende vann er det en ekstra sikkerhet. Forkulturen skal ha ca samme OG som vørteren forøvrig (0,43). Kjøl ned til 20-24 grader i vannbad, og tilsett rehydrert gjær. Tilsett oksygen. Sett kolben på magnetrøreren og la den snurre til det er tid for å pitche. Om den kan få snurre i 2-3 timer er det nok. Det kan begynne å skumme ganske raskt. Det er et godt tegn på at gjæren er sprengkåt – og klar for større oppgaver. Overfør til gjæringskaret. |
