12 cinnamon stick broken
24 coriander seeds crushed
2 whole nutmeg chopped
16 whole allspice crushed
Should be 4 vanilla beans but used 4-6 tsp of vanilla extract.
Place all in mesh bag at end of boil and steep for 10 minutes and remove. |

Notes: Pilsner is Barke strain. Added DME to bring up gravity, since I took some wort to make starters with. Normal efficiency is 70%. Sugar was 1 lb blonde Belgian, 3 lb cane. Added DME to make 1080 gravity. Amazing attenuation, rousing yeast, lots of sugar, adding staggered nutrient & having oxygen available in headspace most of fermentation. Double checked using hydrometer on finished beer. |
