| Notes: Chill the wort to slightly below fermentation temperature, about 48°F. Aerate the wort with pure oxygen or filtered air and pitch the yeast. Ferment at 50°F. After 4 days of fermentation, add the dry hop addition. After 7 days total, slowly raise the temperature to 60°F for 3 days for a diacetyl rest, then slowly lower the beer to 34°F. Once at final gravity (approximately 14 days total), bottle or keg the beer and carbonate. Lager at 34°F for approximately 1 month before serving. |

Notes: Use teabags to place the hibiscus in the hot wort.
Hold the mash at 122 °F (50 °C) for 15 minutes then raise the temperature over the next 15 minutes to 154 °F (68 °C). Hold until the conversion is complete, about 60 to 90 minutes. Raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (25 L) and the gravity is 1.039 (9.7 °P).

Notes: Take the worth to a boil, then cool between 20 and 45 Celcius. Transfer worth into a topped kettle, add probiotic capsules.
To reduce risk of infection, cover with plastic wrap, do not aerate (lactobacillus plantarum works fine without oxygen). Keep temperature below 45 to allow growth, but not too low to risk infection. The fastest temperature appears to be around 30C.
Add 1 billion cells per liter for a 36-hour souring, or 0.5 billion cells per liter for a 72-hour souring. For this 20L recipe, that's 20 billion cells, or 4 capsules, for a 36-hour souring. Half for the 72-hour souring. Expect good results at 30 Celcius for 36 hours.
The proceed as usual: boil, hops, chill and transfer to fermenter with the yeast.
Ferment 10 days, then add raspberries. Bottle or keg 7 days later.
The desired probiotic contains Lactobacillus plantarum. The suggestion below contains 5 billion cells per capsule.

Notes: trying some unfamiliar ingredients on a style from the 1870s
"A floor-malted barley malt from a single barley variety (Optic), and produced by a centuries-old, family-owned maltster (Fawcett). Optic is another malt considered to be one of the last of the traditional English Pale malt varieties still produced in the UK. Adds a degree of biscuit flavor. Brighter and lighter in flavor than Pearl, a great malt for the production of Real Ales."
"Most widely used for their aromatic properties, UK Challenger hops can act as a bittering agent in your brew, as well. These hops make a great choice for early and late kettle additions, that contribute a spicy, woodsy cedar, and green tea character to any type of Ale. You can also get crisp fruity notes with late kettle additions. This is a granddaughter of Northern Brewer, with lineage also including Target and Northdown.
