His recipe also had different yeast and ferment schedule.
[Wyeast 1318 London Ale III
Ferment at 65-68 F (15-18 C) for 10-14 days. Feel free to ferment higher if you want to push more fruity esters. Also feel free to add 10 PSI (0.68 bar) after dry hopping.]
I did a no sparge batch in the anvil foundry. I'm calculating at 60% efficiency.
20 minute whirlpool at 175F (79 C) with
3 oz (85g) Cascade (6.4% AA)
3 oz Denali (13.8% AA)
Dry hop on Day 3 of fermentation with:
2 oz (56g) Summit (16.3% AA)
1 oz (28g) Denali

This means calculation at 50% efficiency, for single infusion. Is this due to many wheats and oats being used?

Notes: Maple syrup added at flameout to provide subtle maple notes in the finished product. For more direct maple taste, add to secondary as well, but beware of spontaneous fermentation.
Bourbon, oak chips, and maple syrup are added into a mason jar on brew day to soak for a week during primary fermentation. Pitch into secondary, then rack on top.

Notes: Made a starter but froze it...
No chemicals in mash. Mashed in and held at 153-4 for an hour. Mashed out at 167. Sparged with 16g. of 170-75 deg. water.
First runnings - 1.085
Middle - 1.061
Final - 1.007
Plugged the pump into the outlet of the boiler and it worked great!! Tried to keep it at 4 min. per gallon. Only collected 24g. but gravity was high. Added a gal of filtered water. Pre-boil was then 1.055. DOH!! Calculated OG was 1.062. Dan Gordon took a sample back to his lab. Actual OG was 1.060 so our boil off was not quite as much as we thought. IBUs measured 102.4, which he said should result in 65-70 in the finished beer. We calculated 62 so we are getting a little better hop utilization than this program calculates. Maybe because late additions are harder to calculate?
Cooled to about 77 deg and put in the fridge. Cooled to 66 in about 2 hours. Dumped trub at about 4 hours and pitched 4 packets of yeast. Slow activity apparent in 12 hours - full fermentation in 24. On day 3 added 30 grams of Ferment O, a yeast nutrient, rehydrated in distilled water.
On day 7 gravity was around 33 so the dry hops went in. On day 10 gravity was 22 so temp up to 77 for d rest.
Infected and dumped. Found some residue in bottom valves. Soured and nasty.

| Notes: This is an awesome recipe. I borrowed it from Jim Barrie of Gainesville FL. via the AHA website called PreNup Pale Ale. I made minimal modifications, but a great hoppy pale ale. I did brew it so that its final ABV is closer to 8% not 6%. Which makes it even better. Cheers |
