| Notes: Bake shredded coconut at 350 for 15 minutes flipping every 5 minutes until coconut is evenly toasted. coconut and vanilla bean added to 750mL of white rum and left to sit for 2 weeks, then put in freezer to separate fat and oil from alcohol. 30 hr. 200mL yeast starter on stir plate with the appropriate amount of yeast nutrient and DME added. ascorbic acid to reduce oxidation risk. 69F average fermentation temp. FG reached in 3 days - *FG reading will higher due to lactose* - take gravity readings! Oregon Fruit Pineapple puree frozen for two weeks in can. Pineapple puree, vanilla/coconut extract added to 200 micron sanitized mesh bag and then added to sanitized keg. |

Notes: Brewed 6/23/2018. A sudden downpour of rain diluted the boil. So I ended up with 4.5 gallons of 4.8% beer. But it's very good.
The V.K. yeast was finished in about 2 days. I was going to top-crop it but never got a chance because it settled so fast. I transferred it to a carboy for a week, and then bottled. I wish I had bottled that extra half a gallon because I think it could have gone grain-to-glass in a week with bottle conditioning -- but much better at 2 weeks. |

Notes: 1. Making a Starter:
Bring 1.5 Liters of water to boil. Add 6.5 oz of DME and boil for 5 minutes. Transfer liquid to E. Flask and allow to cool. Pitch 2 packets of yeast into cooled liquid and place on stirrer.
2. Making the Wort :
Heat 2.5 Gallons of Water to 165 degrees. Place grains into water and soak for 30 minutes. Sparge the grains with 1.0 gallons of warm water.
3. Boiling the Wort :
Bring the "Wort" to a boil. Add all of the included "Fermentables" to the "Wort". Stir the "Fermentables".
4. Boil Hops :
Boil 1.75 gallons of water for 10 minutes and cover. Then cool it to room temp
After 40 minutes of boiling add 1 oz of Liberty Hops
After 55 minutes of boiling add 1 oz of Liberty Hops as well as the Honey
7. Add Water :
Transfer your cooled "Wort" from the brew pot into your fermenter. Add enough water to bring the Wort to 4.5 gallons. Stir the "Wort". At this time, take a Hydrometer reading to record the Original Gravity.
8. Begin Fermentation:
Add the yeast to the "Wort" surface. |

These directions are presented by Dornbusch as general/standard Alt directions.
Dough-in at 122°F (50°C) for a 30 minute protein rest. Increase the mash temperature by adding hot water and/or direct heat to 148°F (64°C) for a 15 minute beta saccharification rest. Raise temperature again to 156°F (69°C) for a 15 minute alpha saccharification rest. Mash out by raising the temperature to 170°F (77°C).
Altbier boils are generally 90-120 min. The longer boil time assists in darkening the wort. Subsequently, hop additions will vary depending on length of boil.
Ferment the wort at 60°F (16°C) until it is about 90% attenuated. At the end of primary fermentation, reduce the fermenter temperature by about 2°F (1°C) per day until the temperature gets down to 32-40°F (0-4°C). Let it sit for two weeks to two months (the longer the better). It is recommended to rack the beer off the sediment once or twice with in the first week and purge debris out of the bottom of the fermenter. |
