About 1g Lactic acid Ph - 5.2. Sparge water 5L, PH - 5.4. Mash in 66C - 60 min, without mashout. Filtrate, sparge - as usual. Boil 60min Avoid hops for early addition. 15g Columbus (Pellets) - 15 min - for bittering. Used 25g each Centenial, Mosaic (whole) for Whirpool start in 40C to 21C for about 15min. Transfer to fermenter, aerate and pitch yeast. Fermentation started after 8 hours. 25.02 - once fermentation dropped down to 7BLG added 40g each Centenial, Mosaic. Fermentation in 19C. 16.03 fermentation is over. 1.008 FG. Removed to ColdCrash in 3 degrees for 2 days. 18.03 - kegging with 15g Centenial, Mosaic. Let it stay in 19C for 3 days, after remove to lagering in 10C. Final PH - 4.3 FG - 1.008

Bubble O2 thru stone for 1 minute. Pitch yeast and clarity fermentation. Ferment at 66F 2 weeks in temp controlled freezer. Kegged. Estimated <10 PPM Gluten obtained by using White labs Clarity Ferm to break down the gluten in the fermentor.

Our local Brewery gives participants 5 gallons of their base wort. Brewers build off this wort however they choose.. The 10 lbs of 2-Row represents the provided wort. The rest of the recipe is based of of BYO's Shiner Bock clone. I changed some of the amounts to create 6 gallons of finished beer in the style of a doppelbock. I am going to split the batch in two, and ferment half with Imperial "Global" Lager Yeast... and half with Imperial "Loki" Kviek Yeast. I will likely enter the Kviek into the competition, because I don't expect the lager to be ready in time. I am also interested to see how the two batches compare to one another. Side note: both Imperial Yeast strains are coming from home harvested yeast.. I have Fermentis dry yeast on standby in-case the harvested yeast is inactive.
