Notes: Inspired by a friend to use a vanilla cream ale base recipe, modified to extract, maintaining low ABV, low bitterness, high sweetness, moderate creaminess. Slightly darker beer for the style to bring out roasted notes. Not using butterscotch flavor, but using a butterfinger candybar, which will also darken.
Butterfinger:
1 King sized Butter Finger for a 5 gallon batch
2 cups water
Coffee filters
patience
Break the butter finger into small pieces, and bring 2 cups water to boil. Boil the butterfinger pieces for ~30-45 minutes. Rolling boil, not light boil. Drain through coffee filters. May need to poor some, sift, discard, repeat. Will probably lose a lot of water. Top off results with 1/2 cup water, boil an additional 15-30 minutes to sanitize. Add at flame out of hops schedule.

Notes: It's a lot of Saaz but luckily Saaz is not one of the priciest hops around and there is no indication anywhere that Pilsner Urquell themselves use any other hops besides Saaz.
Colorwise it's difficult to get the exact correct color unless you use a lot more vienna or even munich malt. Pilsner Urquell produces their own floor-malted barley and as such it might be difficult to find pilsner-malt at the right EBC at your LHBS. Using too much Vienna or Munich just for the sake of color will make your beer sweeter and thus more "bavarian", which isn't desired in a fairly dry czech pilsner. |

Notes: Place 3 gallons of cool water in brewpot and bring to 150 F. Put steeping grains in bag and steep for 1 hour.
Lift bag out, let drain and discard.
Bring water to boil, remove from heat and stir in 3 lbs of DME. Return to heat.
Bring to boil and watch for messy boil over. Once risk has subsided, add 60 min hops and start timer.
At 20 minutes, add whirfloc (or irish moss) and 20 minute hops.
At 5 minutes, add remaining DME (using same procedure as above).
At 1 minute, add last 0.50 oz of hops.
Add 1 gallon of cool water to primary.
Chill, transfer to primary, add cool water to bring to 5.5 gallons, pitch re-hydrated yeast. |
