Notes: Easily the best beer I've brewed to date. Very NEIPAesque thick creamy mouth feel, cloudy. The Nelson-Sauvin takes the lead with the white grape/chardonay flavours followed by the companion coconut and citrus of the Sabro.
I found flaked buckwheat at bulk barn for cheap so I though it would compliment the base malt, wheat and hybrid Farmhouse yeast (attached flavor & aroma pic)
Flaked Buckwheat:
"Sweet and earthy with notes of wildflower and peanut shell. A great addition for foam retention and mouth-feel to pale ale and farmhouse recipes, reacting well to brettanomyces."
Next time I'll mash with at least another gallon of water as that little amount killed my efficiency.
The first Sauvin-Sabro dryhop didn't do much and when I took it out I noticed a lot the pellets hadn't fully dissolved. I decided to do a second Mosaic dryhop and I'll shake the keg up more often. |

If you want the colour but less of the flavour of the dark malts, try substituting the Carafa Special III for a dehusked version of Carafa.

Notes: lower pH with lactic acid between 4.3-4.0 before pitching Lactobacillus.
Cool wort between 75 F or 95 F to pitch Lactobacillus.
Purge head space in grain father with c02 after pitching lactobacillus as well as everytime the pH is checked purge it again and cover back up.
After pH reaches 3.4 do a second boil to kill lactobacillus cool down and pitch yeast. |

Notes: took the toast to 20fiftean recipe and scaled up proportions for new brewhouse efficiency then added brown sugar and pumpkin
justified the pumpkin and spices amounts with my trustmonkeypki recipe. although this beer is about 0.8% higher in abv but im too scared to use more so well see how this turns out and maybe bump it next year.
justified the brown sugar amount with the trustmonkey belgian recipe ive done (and planned a second) - that recipe used 1.125 lb cane sugar so this should be close.
used same hop profile, using 1oz golding instead of 0.5 . need to decide on that too.
prob should look up other beers ive done and compare BU/GU to make sure 30 will be enough for a 6.5% beer?
ok i totally messed up the hops - i didnt buy saaz because i thought i had some but didnt. also the original recipe called for 1oz styrian golding 5.5 but all they had was styrian celeia 3.7. luckily i have hallertau mittelfruh so i will use that for bittering and flavoring in addition to the celeia.
decided to do 45 oz aka three small cans or one big can and one small can. added only .02 in og. worried about sparge but well see. considered adding pumpkin to boil or some other time but even northern brewer youtube says to mash it even if doing extract kit.
