Notes: This recipe is named "The King's" Amber Ale because of the group of players for the board game "King's Dilemma", that the beer is brewed for.
About Striking/Sparging:
This recipe has been aimed at the Robobrew system I use. Since the grains sit a few inches off the bottom in this system, additional mash water is required to reach the desired mash thickness. If you are brewing this in a different system, consider modifying the strike/sparge water calculations.
Initial notes on kegging:
Final beer ended up being slightly lighter than expected.
Upon a taste, uncarbonated, after a day in the keg showed that it came out with a significantly hoppier aroma and more bitter flavor than I expected. Strongly and alluringly aromatic of the Amarillo hops, this takes more like an APA than an amber. malt and mouthfeel are still limited, and fairly thin, I assume mouthfeel and malt flavor would be more present if mashed at a higher temperature, or fermented with a different yeast.
Next time: set temps a few degrees higher than written, and test with thermometer. Use entire water budget minus a gallon on mash, sparge with remaining gallon by pouring over grains (when lifted from the wort).

Ingredients:
10 Lbs Light Briess DME
2 oz fresh Magnum Hops (10.9 Alpha)
2 oz fresh Halleratau Mittelfruh Hops (3.6 Alpha)
1 package Imperial "Dieter" German Ale yeast (G03)
Boiled 8 gallons of water in large 12 gallon aluminum pot.
Added malt, and about 5 min after boil, added 2 oz magnum hops.
Hop schedule:
2 oz magnum hops added at start of boil, boiled for 2 hours.
@ 2 Hr mark, removed boiling hops, and added 2 oz mittelfruh, boiled for 15 min.
After boiling, 7 gallons of malt solution was remaining, and the extra boiling time gave the wort a nice, dark copper color. Removed hops, let malt drain from hop bags,
then discarded.
Let solution cool overnight, and about Noon the next day, added primary vessel to a bathtub full of 55 F. Water.
Pitched yeast after about 2 hours cooling in bathtub. Everything was sterile, including yeast bag, airlock parts, container, lid, and long stirring spoon. Ale was kept at 55 - 56 F during peak of
activity which was significant as the airlock had to be cleaned
every several hours due to foam getting up into the airlock and
clogging the airlock cap holes.
Ale was showing pressure on the airlock after about 12 hours.
24 hours later, head was rising and airlock started working more vigorously.
Primary container is kept in cool water at about 57-58 F, during peak of activity.
After head falls, water will be drained and temp raised to around 62 F.
After 7 days, temp was raised from 62 F to 66 F. and held there for the next 3 days for cleanup.
Bottled on 11th day. 2.3 atmospheres, using 10.3 oz light DME, dissolved in 2 cups boiled beer.
Carbonation in bottles at room temp. for 14 days. Chilled to 32 F. and left for 3 months. After aging, this ale is amazing! |

BREW DAY: 19-AUG-18
Didn't boil vigorously enough and ended with right at 6 gallon of wort, FG = 1.059, so extraction efficiency was increased.
Oxygenated for 45 sec after chilling to around 90F, then let ferm fridge bring down to low 50Fs overnight.
4L of starter cold crashed to ~600mL and pitched at 6AM on 20AUG-18.
Ferm schedule:
1.) 51F for 5 days (make sure at least 50% attenuation has occurred, so below 1.040).
2.) Ramp up to 67F for remainder of ferm time.
3) Slowly ramp back down to 32F over several days (consider adding gelatin around 50F)
UPDATE 24-AUG-18:
After 4 days, beer is at 1.040 gravity (50% to FG is ~1.038), tonight start ramping up to 67F (3 deg every 12 hr) for remainder of fermentation.

Notes: Brewed 6/23/2018. A sudden downpour of rain diluted the boil. So I ended up with 4.5 gallons of 4.8% beer. But it's very good.
The V.K. yeast was finished in about 2 days. I was going to top-crop it but never got a chance because it settled so fast. I transferred it to a carboy for a week, and then bottled. I wish I had bottled that extra half a gallon because I think it could have gone grain-to-glass in a week with bottle conditioning -- but much better at 2 weeks. |

| Notes: Heat the liquid malt extract by placing the bag in hot water. Boil 3 litres of water, add to fermentor. Add warm extract and yeast nutrient. Stir, and add cold water until you have a total of 17 litres. Add 2 litres of chilled pasteurised passionfruit juice. Check temp, should be 20-23 degrees C. Add 1 packet of Champagne yeast. Ferment for 7 days, 21-22 C. Raise temp to 23-24 degrees. Add salt. Let ferment for another week. |
