(10-6-2017) Activate smack-pack yeast ~3hr. Add yeast to cooled starter culture media (~iL water + 0.25 lb brown sugar + 0.25 DME; boiled and simmered 30min) in sterile 4L flask. Had ~7hr growth with occasional swirling before addition to cooled wort.
Steep grains at 66C for 30min, sparge with 77C water. Add Briess Golden Light DME (10.25 LB), bring to boil, add hops and gypsum at appropriate times. Cool wort, add to primary with remaining water, aerate, add yeast, and check with refractometer. Use one beer.net to convert Brix to OG.
Brix=17.5
OG=1.073 (lower than expected) =volume is may be closer to 6 gal than 5.5. Also not as black as I was shooting for. Next time don't steep in grain bag.
(10-11-17) Transfer to secondary. Brix = 11.8
(11-6-17) Brix =11.8 still. FG @ 1.031. ABV 5.5%. Fermentation stalled or original Brix not accurate due to insufficient mixing wort and remaining water. If OG was 1.087 (Brix of 20.6), then FG=1.023 and 8.4% ABV.
Bottled with ~1/2c corn sugar. Not enough room in carboy to fit all sugar solution I had planned (3/4c).
(1/14/18) ~9 weeks after bottling, it is now nicely carbonated with tan head. |

(Volume into Fermentor = 5.5 gal)
Dough-in with around 10 gal of water for a mash thickness of 1.5 qt/lb. Then mash cap with roasted grains to move down to 1.3 qt/lb. Crush separately and add in for the final 15 mins and sparge. (optional step)
Add coffee and chocolate at flameout and again in the secondary. Add chocolate to a cup of hot wort to melt, then slowly mix into pot. Add coarsely ground coffee for a 10 min steep just before cooling.
Add whiskey-aged "char" oak spirals to the secondary fermentor.

Add a blend of cracked Sumatran and Ethiopian coffee beans to fermentor for a 48 hr steep (timing & dosing rates from NHC presentation by Michael Tonsemiere). |

Notes: I am brewing this beer for a local Homebrew Competition.
Our local Brewery gives participants 5 gallons of their base wort. Brewers build off this wort however they choose..
The 10 lbs of 2-Row represents the provided wort.
The rest of the recipe is based of of BYO's Shiner Bock clone.
I changed some of the amounts to create 6 gallons of finished beer in the style of a doppelbock.
I am going to split the batch in two, and ferment half with Imperial "Global" Lager Yeast... and half with Imperial "Loki" Kviek Yeast.
I will likely enter the Kviek into the competition, because I don't expect the lager to be ready in time.
I am also interested to see how the two batches compare to one another.
Side note: both Imperial Yeast strains are coming from home harvested yeast.. I have Fermentis dry yeast on standby in-case the harvested yeast is inactive. |

Notes: I set the efficiency to 65% on this recipe, since I lose efficiency in my system with this much grain. If you can do better, the grain bill can be reduced.
When I brewed this, the FG settled to about 1.025 with WLP001, which was on target. The beer tastes mostly as expected, but I get a mild fruity taste. I think the cause is under-pitching/aerating, not the recipe. |
