-End result is about 20 liters of beer, 2.5-2.6 Co2/vol
-I brewed this in 2022 April, and it was one of the best beer's I ever brewed, very delicious, rich aroma and flavour.
-Brewing again on 2023. 14. of April.
-So the 2023 version was a bit rough around the edges. The only difference was that I wrapped the fermenter with blankets and jackets so it fermented at 27-30°C, which gave it a rather stonefruit character to the beer, than orange (which I'd prefer). So next time I'll stay with the room temperature fermentation, and use Warrior hops for bittering, also shoot for a lower carbonation about 2.5 Co2/vol. |

The amounts of grains we used are roughly:
50% 2 row pale malt. (The first couple of batches were made with Great Western)
40% white wheat malt
10% flaked oats.
Hallertauer Mittelfrueh hops were added for a 90 minute boil. Bittering should be around 17.5 IBU. Only one addition.
Blue Moon has always used pre-ground corriander and Valencia orange peel. Keith did not want the bitterness of Curacao oranges. He preferred the sweetness of the ground Valencia.
Try 1.25 tsp of ground corriander added to the kettle 10 minutes before the end of boil. This is for a 5-6 gallon batch.
Add 0.33tsp of ground Valencia orange peel 5 minutes before the end of boil.
The Chico strain would work well in this recipe. You want a neutral taste from the yeast. Keith has said that the flavors that should come through are the orange peel and corriander, not the yeast.
Be careful when lautering. I have made this recipe and some variations of it in three different pubs, with three different systems. I usually have trouble and end up sticking the mash. Run off very slowly. |

Notes: 5/20/16 - mashed around 148 to 155 for 90min sparged with 2.7l of 175 degree. No yeast nutrient. Well first try so boil off was not as expected at 90 mins. 4 gals for .079OG the yeast want 70 to 75 for few days then drop it.
6/1/16 - FG .020 disappointing for 7.74% will put on oak and age anyway.
11/4/16 - OG after aging .012 for 8.79% tastes good too! |

1.00 lbs. Orange Blossom Honey (added with 5 minutes left in the boil)
1.5 tsp Black pepper, Fresh ground @5 min.
Chill to 65 degrees, aerate well on the way to the fermenter and pitch the yeast starter, ferment at 68 degrees for 2 weeks, move the fermenter at that point to ambient room temp for another 2 weeks, for me that was 78 degrees in the brew closet.
