Notes: I used a huge slug of slurry. Fermented at 62 for ten days, moved to 70 for two days, returned to 62 and dry hopped for 5 days. FG was 1.008 on my hydrometer.
It took two weeks in the keg for the grass flavor to go away, but made for a great beer that went away fast after that. |

Notes: 6.75 gal heated to 186. Dropped to 176 then stirred to 165. Dough in with additional temp drop to 151. Stirred until 149.5. PH was 5.4. Fell on its own to 148.3. Added another qt of boiling water ZERO change. Continued to reduce to 147.2. In the future let it go at 1.5 to 2 above final target.
8.5 gal collected into boil kettle after allowing mash tun to drip for 30 more minutes. Boiled for about 75 min. 5.75 gal into fermenter at 1.075. Forgot Clarifying tablet.
After 16 days 4.8 gal of beer (50 bottles) was packaged in Belgian bottles with 10 oz (283 grams of sugar) along with a small Kveik yeast starter to assist in rapid carbonation and stored at 78° for a week. |

Notes: 5/1/21-Batch #2 is Nelson Sauvin, Motueka, and Kohatu. Changed the malt base to fit what I want to move all of my pale ales/blondes toward. I will follow the mineral and acid additions I normally do for light, hoppy beers. With the new system, I ended up with too much H2O, so boil was really long, I need to adjust for future beers. Also, with the pump>Hopback>plate chiller>fermenter setup, I am not sure how much beer I lose in between, but the beer is coming out at 69F-SO WINNING!
Burton Minerals:
Using the new system of all strike/sparge water in one pot, all minerals are added to the water at the beginning. Acid added individual.
Mash: 2.5ml 75% Phosphoric, 2g CaSO4, 4.5 CaCl, 1.5g MgSO4
Sparge: 4ml 75% Phosphoric, 2g CaSO4, 4.5 CaCl, 1.5g MgSO4
Kettle: 3ml 75% Phosphoric
**4/4/2020-This is going to be a NZ hop experiment. I may change the name, but it falls into the category of APA or Hoppy Blonde, so I may leave it the same. I plan to adjust the water chem for this beer to bring up the acidity (lower ph). Excellent flavor of the hops and the biscuit malt. Fermented at 63-66F. Kegged on 4/11/2020. Went fast. Batch #1 was Dr. Rudi and Taiheke Hops. |

Notes: I ferment in a keg so this is how I do it.
1. Pitch yeast at 70 and continue to chill to 65
2. Use an airlock on the keg until high Krausen or about 2 days for this beer. Yeast will have attenuated about 60%. Add dry hops and put in normal corny keg lid
3. Attach spunding valve to 5 psi
4. Allow temp to raise to up to 70.
5. Once you have 7-8 points left up psi to 15-20
6. Allow to sit 3 days ay final gravity
7. Pressure transfer to a serving keg
8. Carbonation should be about be close to 2 volumes. You want 2.5 so add some gas while chilling. It’s ready to drink once cool

Notes: Double crush grains, add to bag. Strike water temperature of 156/152 for 60 minutes. Increased temperature to 170 for 10 minutes. Drained and squeezed bag. Boil as normal for 60 minutes. Cool it to 55 as quickly as possible. Aeration of wort by splashing into a bucket and then into primary fermentor.
Primary fermentation until it is very quiet. Then transfer to secondary and set the temperature to 35 degrees. Lager it for 4 weeks, then bottle as normal using 2/3 cup of corn sugar in 16 ounces of boiled water.
Condition bottles at room temperature for 2 weeks. |
