| Notes: Deja Igliashon (Mutantis Brewing in Portland, OR) came up with this recipe in response to the Zero Tolerance GF Brewing Group's style guidelines series. Deja's advice, "Eckert's dark biscuit (18L) is possibly a key ingredient for this style. Not really for color, but to give the beer a bit of that savory "bite" that I think of with Guinness. A very (VERY) small addition of Barbados molasses could also be useful to give a touch of metallic bite. Perhaps some flaked quinoa would be a good inclusion as well; I find quinoa lends a bit of dryness to every beer I've used it in." |

Notes: Isolated from our Hornindal Kveik (OYL-091) culture, Lutra® is shockingly clean with unrivaled speed when pitched at 90°F (32°C). The strain is perfect for brewing an even more neutral and refreshing pseudo-lager at its lower temperatures, without the lead time of a traditional lager yeast. Lutra is your worry-free way to navigate the evolving demand for cold ones.

Notes: Same recipe as P4#1 with Carafa III Special instead of Carafa II
Garafa III grined finer than rest
Firstwort hopping (removed 0.5L before boil for yeast dehydration. Removing during boil means removing some hops. Wort was boiled separately).
Preboil: 21.5l 12ºP
Beer apears almost black. Darker than #1. More than expected
Underpitched with dry yeast: 0.45M/ml/P (1 package, 11g)
Postboil: 18.5lit. 13ºP
Final volume in fermenter 16L
Final gravity 2.2-2.3P -> ABV 5.7%
-- P4 #1
Carafa II grind finer than CaraMunich & Pale Ale.
Firstwort hopping
Preboil: 22lit. 12ºP
Beer appears to be darker than recipe.
Postboil: 19lit. 13ºP
Bitterness: slightly above average (3.5/5bitterness)
Color: Dark, almost black
Underpitched with dry yeast: 0.45M/ml/P
Final Gravity: about 2.5ºP (picture) -> 5.7%
End of fermentation: Very light in aroma and a smooth bitterness (3/5biterness) |

Notes: Concept: Featuring WLP500 and over 50% malted wheat, this beer is a like a crossover between a hefeweizen and a Belgian blonde ale. My freezer has been sheltering 2lbs of vienna and 1/2lb Belgian aromatic for a few months now, so both of those grains find their way into this recipe. German Tradition (also sitting in the freezer) should provide some "to-style" noble hop aroma and flavor. IBUs to Belgian blonde ale level.
"open fermentation" with foil over lid of carboy for first few days
add airlock after krausen starts to fall
Blend 1 pack each of WLP500/WLP380 in a 2L starter for this beer. Decant, save some for later, then pitch the rest.

After fermentation is finished (d = 1.020), add 20L of water and keg. Final product 4.95%. |
