Notes: 5/1/21-Batch #2 is Nelson Sauvin, Motueka, and Kohatu. Changed the malt base to fit what I want to move all of my pale ales/blondes toward. I will follow the mineral and acid additions I normally do for light, hoppy beers. With the new system, I ended up with too much H2O, so boil was really long, I need to adjust for future beers. Also, with the pump>Hopback>plate chiller>fermenter setup, I am not sure how much beer I lose in between, but the beer is coming out at 69F-SO WINNING!
Burton Minerals:
Using the new system of all strike/sparge water in one pot, all minerals are added to the water at the beginning. Acid added individual.
Mash: 2.5ml 75% Phosphoric, 2g CaSO4, 4.5 CaCl, 1.5g MgSO4
Sparge: 4ml 75% Phosphoric, 2g CaSO4, 4.5 CaCl, 1.5g MgSO4
Kettle: 3ml 75% Phosphoric
**4/4/2020-This is going to be a NZ hop experiment. I may change the name, but it falls into the category of APA or Hoppy Blonde, so I may leave it the same. I plan to adjust the water chem for this beer to bring up the acidity (lower ph). Excellent flavor of the hops and the biscuit malt. Fermented at 63-66F. Kegged on 4/11/2020. Went fast. Batch #1 was Dr. Rudi and Taiheke Hops. |

Notes: perfectly decent example of a classic english amber ale. Quite malty and veers to soft and sweet with little bitterness.
reminds me of a pint of Tetleys or Hobgoblin. lovely colour and very easy to drink.
Personally i'd add a few more bittering units next time to balance it out. |

Notes: Pale yellow, smooth, malt forward, light and crisp body, can taste just a bit of sweetness from the corn. A bit of diacetyl initially, which I find is common with this yeast, even with several days of diacetyl rest. It will dissipate completely with time. This beer is best after minimum 4+ weeks lagering. I think its better kegged with that fizzy carbonic bite.
Clean taste, no fruity aftertastes. Peppery? hop aroma at the end of swallow, dry and drinkable. Goes good on a hot day in the water and sunburn.
Still didnt make me the most interesting man in the world.... |

Notes: Bring 4gal of water to 172degF for sparge.
Use sparge water until amount in kettle reaches
7 gal,then stop sparging.
Started this brew on Jan.6th 2016.Yeast was fresh
and started quickly. by next morning it was churning.I ended up about a half gallon short after removal from trub.Original gravity was 1052
so I added a half gal of water, that brought gravity down to 1.046 My mistake.I didn't calculate the amount of dilution.It should still be a tasty brew.Racked to secondary Jan.12th.
bottled 1-24-16.This was a tasty brew.It took 2mos.in the bottles to develop the proper head retention.
Changes: Stick with the wyeast 1469.had good flavor.
Reduce the chocolate to 3oz.
Increase Victory to 2lb.

| Notes: This is my attempt at an easy brew to sort-of replicate the flavor and nose of a Sierra Nevada Pale Ale. It works well enough for me. Everyone who tried it loved the result. It's a nice even, clean beer with a great nose thanks to Cascade. It's a great session beer at just under 5%. Steep a bit of cara red to give it a little more amber color. This is a concentrate, 2.5 gallon brew then blended with 3 gallons of cold water in fermenter after chilling. Lost 1 quart of water to steam and about 1 quart in trub. I bottled exactly 5 gallons. |
