Two - row, great western preferred. C-15, Carpils Dextrine
Added Acidulated malt for pH adjustment to my local water. You may not need this addition.
Adjusted pH: 6.9 to 5.24
IBU: 72-73

After researching brew water for West Coast IPA's, I have decided to try this recipe using distilled water (no chlorine or chloramines) and adding brewing salts for a Pale Ale profile (half of the minerals of Burton on Kent water profile). Calcs brunwater.com and verified by this software. Water chemistry is included here because water chemistry module of this software is full of errors

5.6oz DME in 1600ml starter, pitch two packs
Use modified Doppelbock 2 fermentation profile (7 days @48F, 36h ramp to 68F, D-rest 2-3 weeks, cold crash 7 days @34F)
After crash, transfer to bucket, hold 34F 48 hours, drop to 30F. Check frequently ice crystals. *VERY GENTLY* Scoop out crystals and melt/measure volume, record. |

A nice light clear beer with abundance of juicy citrus/tropical hop flavours coming through as well as those in a subtle fruity hop aromas. Pretty pleased with the outcome....tasty, dry and refreshing. |
