Notes: This was an outdated Brewers Best Pucker Peach Sour Ale.
I refreshed the steeping grains with fresh grains. The Philly Sour yeast expired (01/2023) with an approximate 75% viability.
Thought I would throw in a bit of Maris Otter to add a bit more malt flavor.
Steeped grains for 30 minutes at 154 degrees.
Mash PH calculation was not used since it was a partial.
Started with RO Water, and added salts to match local water.
Had to add and additional "1" teaspoon of Baking Soda to bring the final Boil PH to around 5.1. |

| Notes: "Troublemaker" - was planning the 'diluted mash' no sparge technique (see https://www.morebeer.com/articles/No_Sparge_Brewing). This requires 20% more grain (and software calculates you'll get the higher gravity not knowing of the no-sparge). Figured I'd really get a 1.055 or so. Then my grain mill just wouldn't crush the grains--probably rolls need re-knurled, they were clean). Brewing buddy to the rescue, but he does a finer crush, ended up getting better efficiency despite the 'no sparge'...so not a sessionable Belgian Pale anymore! |

| Notes: This was still pretty hoppy. All flavor though and not much bitterness. It's also got a ton of mouthfeel; almost like a stout. Having a lower mash temp and maybe removing the carapils to make it more of an IPA might be better in the summer. As is it's pretty rich. |

Notes: We have decided to do an IPA or another single hop ale.
We have been looking at the East Kent Golding Single Hop Ale from the book Home Brew Beer by Greg Hughes and BrewDog's #109 IPA is Dead (Goldings).
I think we will probably end up just using up several UK hops that we have left in stock and make a hoppy IPA combining quantities from both recipes.
I want to add a little wheat and need to use up some crystal which will help the beer match the colour of this style.
The hops are British so the beer name for this is Bexhibition. In jest, over the current state of the affairs here in the UK. |
