Notes: Mash grains with 15 qts. (14.2 L) soft water at 142 °F (61 °C) and hold for 30 minutes. Perform a decoction, pull 1/3 thick portion of the mash (~1.5 gallons/5.7 L) and bringing to a boil. Boil for 15 minutes being sure not to scorch the grain mix. Stir the decocted portion back into the main mash. The main mash should now settle at 155 °F (68 °C). Hold for a 30 minute rest. Mash out, vorlauf, and then sparge at 170 °F (77 °C) to collect enough wort to result in 5 gallons (19 L) after a 90-minute boil. Boil 90 minutes, adding hops at times indicated. Cool, aerate, and pitch yeast. Ferment at 50 °F (10 °C) until signs of fermentation have slowed considerably. Some diacetyl is noted in Pilsner Urqell, but if there is a strong diacetyl presence at this point, 2-4 days at 65 °F (18 °C) is advised. Rack to secondary and lager for 4-6 weeks at 40 °F (4 °C). After lagering is complete, bottle or keg as usual. |

Notes: Hit 151 perfectly on the dough in. Strike water was 15F higher than desired mash temp. This one was an award winner and took 1st place and best of show at the SF Dickens xmas fair in 2012!

Notes: Fermentation Profile: 14C for 2 days, 10C for 7 days. Then second staged to a corny keg. Increase 3C roughly every 12 hours until you get up to 20C. Leave at 20C for 2-3 days, do a gravity reading to ensure fermentation is complete before ramping down the temp 3C every 12 hours until it reaches 0-1C. Leave for 3 days before gassing/drinking. This is based on the speed lagering methods as discussed on the Brulosophy Blog.
1 pack of dry W-34/70 to 100g of DME to 1.2 litres of water (preboil). 15-20C for 12-18 hours, 3C for for 6-10 hours.
Review Added 11.4.17 - So this is the first time I used the 'speed lagering' process and I must say I'm very happy with it. I 2nd staged and did the temperature ramp up/ramp down in a sealed corny keg (no airlock). The stuff was ready to gassed and drinkable right and the end of the temperature ramp down. For this recipe I originally planned to use Saaz hops but stuffed up, turned out I didn't have any (must have got drunk again and not updated my stock list), hence the use of Hersbrucker & Halleratau in this 'Bohemian' Pilsner. The end result was a delicous varient on a traditional recipe, came out a little creamy, I served the keg at a work party to rave reviews.

Notes: likely a reasonably large overpitch from using about a cup and a half of slurry, but the slurry wasn't super fresh
forgot gypsum and mash water was low by about 2.25 gallons, maybe due to boiloff or mismeasuring, but it resulted in a mash temp of 150 instead of 156. I added a carafe of boiling water to get it up to 152 after 10 minutes, then sparged another 2.5 gallons of room temp water to get the normal volume.
Fermented sans fridge in old-school style because I didn't rebuild the temp controller in time. Low 70s to start until stabilizing at ~69. Put into the fridge on day 2.5 and already at 1.014. |
