Notes: This beer was delicious! I was a bit disappointed during the lagering phase. The lime I was hoping to get from the motueka hops didn't come through at all until about 3 weeks. At 3 weeks of lagering, it really started to come through and all the flavors were melding really well. Nice bready backbone with the hint of lime from the hops. Dry hop could be increased a little bit but I wouldn't go crazy. Maybe up it to 2.5oz in the DH...
Update 05/10/2021
Brewed this again. As it was previously, this was a hit with our Howler club. Increased the dry hop to 2.5oz and it worked perfectly. Great, subtle lime flavor/aroma from the Motueka. This was definitely more clear than the last one as well. This will be one of our regular rotations for sure!
Update 05/18/2023 - Brewed scaled up version
Brewing this recipe on the 1bbl system, we noticed some changes. The corn character came through very strong. Not in a bad way. However, the balance between the corn and the hops is not as perfect at the 1 bbl size. Next time, we'll drop the corn down to maybe 12-13% and increase the hopping rate just a touch. Overall, as usual, great beer for May.
Update 2/6/2024 - Modified grains per last update. Reduced flaked corn by approx. 4-5% (3.2 lbs). Slightly raised amounts of vienna and 2 row to account for reduction in flaked corn. |

Notes: 1. Treat the 21L of water and adjust to pH 5.3. Heat to 67 degrees Celsius. Leave 15L in the mash tun.
2. Crack grains and maize. Add rice hulls. Strike the water at 67 degrees Celsius. Follow mash schedule.
3. Mash out at 78 degrees Celsius for 5 minutes.
4. Bring 3L of water to 80 degrees Celsius and ready this water for sparging.
5. Remove grain and sparge the grain. Boil the wash at this point and prepare for the hopping. Allow grain to drain.
6. When the wash is boiling, follow the hop schedule for 30 minutes. *At 15 minutes, add a whirlfloc tablet, go-ferm and DAP. *
7. Using an immersion chiller, cool the wort until it is at 15 degrees Celsius for pitching. Ferment at 15 psi for 2 weeks. Suspend a hop-sock of the dry-hops inside the fermenter with a magnet. Drop into the wort after the yeast head has subsided (~1 week).
8. After 2 weeks, transfer to a fermenter to clarify and age for a further 2-4 weeks. Serve at 3 degrees and 0.5 bar in a 9.5L corny keg. |

My Grandparents kept a couple of Websters Houses in Halifax and Wakefield, UK. First pub, The Fleece on Gibbet Street was cask but their second pub was brand new state of the art 1970s model with keg beer which I got to sample around 1975ish. It compared well with other local offerings including Tetley's, Sam Smiths - largely down to Grandad Stan's skills as a cellar man - cleanliness and carbonation! Brewing this to see if it sparks any memories. |

Listening to homebrewhappyhour episode with Rob from Pixel Perfect Brewing, he highlights a couple things that he says helped his octoberfest. fermenting under pressure, and decoction mash. he actually did the decoction on an extract brew with specialty grains. also he did 6 weeks conditioning.
this brew i thought was really good as is, and it was indeed a gold medal winner. but possibly adding these three techniques could make it even better. push it to BOS status.
also, judges said it was low carbonation and needs more head retention. touche.

altered from Drew's March Beer from sept 2019 byo. i changed the hops to get rid of first wort hop addition and to use a single hop, in even oz amount. confirmed recipe uses 1.5 qt/lb mash. the MUNICH/OKTOBERFEST YEASTS REQUIRE DIACETYL REST. if wyeast 2308 yeast not available, check for WLP820 oktoberfest/marzen. Or for simpler wyeast 2124 bohemian lager, WLP833 german bock, Wyeast 2206 Bavarian lager (i might have some of this from last year?)
for diacetyl rest, copied from virginia lager recipe :
going to do byo fast ferment approach janFeb2017. reread but start at 44-50 let fermentation go 50% then (remove the probe from the fermentor let it reach ambient temp then...?) raise temp 5 degrees every 12 hours til you get to 65-68. once you get 100% you can crank down to lager temp for 3-5 days then you done. this will take care of diacetyl rest and apparently gets the lager completely done in 2-3 weeks. |

I ended up with 1052 gravity for 2 large batches (boiler filled to the rim)
Sparge very slow the next time.

I suggest to drop the efficiency to 60% and adjust all the bill accordingly, as 70% is unrealistic.
