Build the "Mead Starter"
Make a tea with the ginger. Add to at start.
Add 1 tsp Potassium carbonate (K2CO3) at start.
Add 2 tsp of Fermaid K at start.
Add 2 tsp of Fermaid O at start.
Ferment at 68F
No water in airlock for 1 week.
Degas daily.
Add 2 tsp of Fermaid O at 1.076
Add 2 tsp of Fermaid O at 1.043.
Ferment at 72F until done. |

Notes: Belgian Trippel Delirium Tremens clone
No added sugar - using 2 lbs of pale 2 row instead to give it some all grain character.
Going to ferment in a ~ 65 degree basement and let it reach natural temp ~ 70-75
Add the 2lbs to brew bag, drop in at ~ 100 degrees, slowly ramp up to 153 to mimic some of the rests. Hold at 153-155 for 20 minutes.
Then stir while adding LME and raise to boil.
Starter yeast with some DME either day before or early morning. Boil 1 tsp bread yeast as nutrient.
Camden tablet at the start, irish moss at 10 minutes.
Oxygenate cooled wort with oxygen stone or agitation.
Will give 2 weeks in primary to fully ferment. May rack to secondary for clearing/aging. May just leave in primary for a month.

| Notes: Mash for 45 minutes at 150°F (66°C). Boil for 90 minutes, following the hops and additions schedule. We knock out at 60°F (16°C) and hold overnight. Shoot for a pH going into the fermentor of about 5.2. Once we see visible signs of fermentation, we lower the temperature to 52°F (11°C) and hold for 1 week. We then let the temperature free rise back to 60°F (16°C) for a diacetyl rest for an additional week, then begin to crash to 32°F (0°C) over the course of a week. We then fine it and let it mature for an additional week before transferring, carbonating, and packaging. It should be very drinkable, light and refreshing, yet still showcase a crackery, doughy malt presence from the Pilsner malt. |

Historically...
- barley, supplementing with rye and/or oats;
- yarrow, bog myrtle, caraway, and other herbs were often used in its flavoring;
- traditionally brewed with minimal, if any, boil (= little hop)
- filtered through a bed of straw and juniper branches layered along the bottom of a kuurna — a carved wooden trough with a plugged bunghole at the bottom
- small amount of hops were added to either the mash or as part of the filter bed
- To build your grain bill, start with a base 80 to 90 percent either English pale ale or Pilsner malt.
Munich malt is found in many Sahti recipes and can make up from 10 to 20 percent of the remaining grain. Use rye in amounts up of 5-10% — though it can make up as much 40% — and a small percentage of malted and/or flaked wheat, or flaked oats could also be included.
- Whether you use hops or not is going to be up to your own preferences, and likely something you will want to experiment with. But remember, the bulk of the aroma and flavor in a Sahti should come from the Juniper branches and berries. When hops were used, they were added as part of the sparge filter or directly to the mash, which was sometimes boiled for a short time as a last step. In this way, hops could have imparted slight aroma and possibly a little flavor, but very little bitterness.
- Stick to low-alpha hop varieties and those of a more earthy/spicy quality. European hops are going to be recommended and should be a nice complement to the juniper. A few good varieties to choose from include:
German Noble Hops — Saaz, Tettnang, Hallertauer Mittelfrüh
English Hops — Fuggle, East Kent Goldings, Challenger
- Often, brewing water was heated with juniper branches to impart even more juniper flavors.
