Courtesy of Ozark Beer cofounders Andy Coates and Lacie Bray, here is a homebrew-scale recipe for their BDCS—a bourbon barrel–aged double cream stout meant for months of wood-aging to balance and soften its profile.
Mill grains and mash at 154°F (68°C) for 60 minutes.
Vorlauf until the runnings are clear of particles, then switch on the burner and run off into the kettle. Sparge at 170°F (77°C), topping up as necessary to get about 7 gallons (26.5 liters) of wort—or more, depending on your evaporation rate.
(If dividing the grist to conduct two mashes, begin boiling the first batch while mashing the second.) Boil for about 2 hours—or longer if necessary to get near the target starting gravity—adding hops and lactose according to the schedule.
After the boil, chill to 66°F (19°C), aerate well, and add plenty of healthy yeast. Ferment at 68°F (20°C) until fermentation is complete and gravity has stabilized.
Rack the beer into a bourbon barrel—or a sanitized fermentor with about 3 oz (85 g) of bourbon-soaked oak cubes—and age patiently. |

Notes: Vorlouf just enough to get bits of grain out then take some of the first runnings (usually 1.5-2 gallons) to the stove-top and add in the 1/2 lb of Muscovado Sugar (use in lieu of brown sugar). Boil for 30 minutes, then turn down heat and simmer for another 30 minutes. Add back to run-off, then proceed with boil.
I'd do two-step yeast starters, one at 1.040, then another at 1.080 to get the yeast tolerant for the higher ABV before pitching in 1.14.
Be sure to use yeast nutrient... and oxygenate/stir well prior to pitching.
If you have extra yeast from the starter at 1.080, save it and add at bottling. CBC-1 at a rate of ~ 1.8 g per 5 gallons, properly rehydrated
Aim for 5.3-5.5 pH due to roasted malts adding acidity in mash that can lower pH.
May finish at 13' or 14'P (1.053-1.057)

Notes: Using 3944 yeast prepare 2L starter, 12-24hr. Cold crash starter into two containers. Use one for primary fermentation and the second for bottle/keg fermentation. Mash with Robobrew V3. Grain conditioned with 2% H20 of grain weight. From RO/distilled water: 12g CaCl and 6g Epsom Salt in 44L of brew water. Perform single decoction on 1gal of mash during 30min protein rest at 122degF. Mash at 149degF for 60min, mash out at 168degF for 20min. Sparge with remaining water until extraction complete, check with refractometer. Boil for 60min, 15min of 0.5oz magnum at boil start. Coriander, orange peel, simcoe, and CTZ steeped at flame out. Chill and transfer to fermenter. Pitch when wort is held at 68degF in refrigeration chamber using 3944 yeast from 1L starter taken during wort boil (prior to hopping). Ferment until complete, ~2weeks (this yeast finishes slow, don't rush!). Agitate fermenter if fermentation appears stalled during second week. Sit at least 2 days on yeast after hitting final gravity to allow cleanup. Cold crash to 32, then lager at 45 for several days. Transfer to kegs or bottles and pitch second half of initial starter yeast allowing bottle/keg fermentation and natural carbonation. Beer will be ready in 2 to 3 weeks. |
