30 day hops are keg hops.
Hops aren't very bright so added 7g Gypsum and 1g Cal. Chlor. to keg on 30/12/16.
45g Mosaic & 45g Amarillo added as a hop tea to 2 1/2 boiled kettle 1/2 cup tap water 73' on 03/01/17
Hop tea mellowed after 1 week. Nice beer at that point. Keg kicked after about 5 good schooners. |

Notes: Pour 3 gallons of clean water into brew pot and begin to heat. Bring your water to a gentle, rolling boil.
Add the DME and corn sugar and Belgian Candi to the water and start timer when wort begins to boil.
Add Cascade hops with 45 minutes left in the boil.
Add Malto-Dextrine with 20 minutes left in the boil.
Add Fuggles hops with 15 minutes left in boil.
Add wort chiller to pot with 15 minutes left in the boil.
Add Irish Moss with 15 minutes left in the boil.
Add Fuggles hops with 5 minutes left in boil. |

Notes: Third variation on a classic English style I got to enjoy while stationed over there. Still hunting for the right flavors although the misses have been enjoyable for their own merits. Changes in this iteration are primarily in water chemistry. Boosting the gypsum levels higher than I do for other malt forward beers although staying short of the historical "Burton" water. |

Notes: Aroma reminiscent of Unibru's Trois Pistoles. High alcohol content comes through with smooth and sweet aftertaste notes notes on the tongue (and lips). Pours murky, muddy brown with a good tan head.
HOP NOTES: Recipe calls for 42g of Styrian Goldings, Fuggles, or Willamette hops (boiling) to achieve 7.5HBU (210MBU).
>Boil the malt extract and boiling hops for 60mins
>Add Irish moss for final 10mins
>Aarate wort very well
>Pitch yeast at 21C
>Ferment at 21C for about 1 week or when fermentation shows signs of calming and stopping
>Prime with sugar and bottle or keg when fermentation is complete
>Although this brew will be ready for your enjoyable indulgence 2-4 weeks after bottling, it ages well at cellar temperatures. |

Notes: 4/28/15 OG .057 4 1/2 gallons will pitch at 70 degrees. Whirfloc added this time. A tad of trub got through the filter shouldn't matter but want to make a note of it.
5/5 FG came in at .011 for 6.04% racking to secondary
5/19/15 - This is more Amber than English so I changed the name. Very malty and brown suger. Will be nice in the colder months. No complaints.
11/18/15 mashed around 152 and mashed out up to 170-5. OG at.055 a little low but a solid 5 gals. Pitching at 66 degrees yeast to 05 not 04
11/30 - FG.0101 for 5.9% higher than expected.
