Notes: Original recipe uses 1 oz cascade @ 60 min instead of chinook. Chinook was added because I have a stockpile of it and it's only a bittering addition.
I thought my efficiency was wayyyy too high. It ended up being that I don't know how to use my new refractometer :( Added more hops to balance the (what I thought would be) high alcohol. This is an IPA now!

Notes: First attempt brewing full 5 gal batch with hibiscus. I would go lighter on hibiscus next time I brew it (about half). Abv is too high for an average blonde. Still came out with no hot/boozy flavor. bottle conditioned this one for 3 weeks. Came out really well.
The herbal, floral and sweet spice notes from the Hallertau pair really well with the floral notes from the hibiscus. The hibiscus lends a really nice cranberry-like tartness and a deep pinkish/crimson color along with some rosey aroma. The amount of hibiscus overpowers the malt character that I think all blondes should have. But, still delicious.

Notes: Mexican Lager, basic malts and corn adjunct, double decoction for color, going to split it into separate 3 gal batches w/ and w/o Mandarina dry hops on mass. Planning a whirlpool addition with both.
Created a starter for an estimated 400B cells based on an arbitrary guess of saved slurry viability from 4/1/17. The slurry was ~25ml of dense yeast, refrigerated in a mason jar, estimated at 35B cells, stepped up to a 2L, which was then halved to save 100B for future use, and stepped up again back to 2L. Should net somewhere between 350B and 475B, so more likely to overpitch as hoped for the style.
My mash efficiency was abnormally high, perhaps due to stepping from 144 to 150 and then decocting 2 gal, ~78% efficiency, 1.057 OG. Diluting it a bit with the 2L starter |

Notes: multi-rest mashing:
- on step #2 & #3: resting the mash at this temperature has been show to improve the yield, regardless of the malts used. Varying the times spent at the 60 and 70°C rests allows you to adjust the fermentable sugar profiles. For example, a 20 minute rest at 60°C, combined with a 40 minute rest at 70°C produces a sweet, heavy, dextrinous beer; while switching the times at those temperatures would produce a drier, lighter bodied, more alcoholic beer from the same grain bill.

continuous sparge:
- The wort is re-circulated and drained until about an inch of wort remains above the grain bed. The sparge water is gently added, as necessary, to keep the fluid at least at that level. The goal is to gradually replace the wort with the water, stopping the sparge when the gravity is 1.008 or when enough wort has been collected, whichever comes first.
