| Notes: The "Schooner" malt is actually Sugar Creek Pre-Prohibition Malt (6-8L) but has similar specs. 24 hour 2L Starter with about 10 oz of 7 week old slurry. Starter appeared to be fermenting normally and should be ~500B cells. Will decant as much as possible. Excellent beer. Cluster hops (homegrown) have a bit of an edge and the beer was perfect from about Days 60-100 once the rustic edge softened. Served from the keg. Naturally carb'd beer in keg during D-rest period with 3oz dextrose dissolved in a few oz pre-boiled distilled water and kept under serving pressure. Beer was still pretty solid at 4 months when the keg kicked. |

Notes: A variation on our extremely popular Kölsch recipe with the addition of honey and a new yeast strain for a lighter body and flavor. Like our original Kölsch kit, this recipe features a pale color, light body, and smooth mouthfeel. Honey adds subtle floral character and lightens the body by fermenting to dryness. Really nice as a summer brew for barbecues and picnics, or to wean your friends off watery mass-produced lagers.

Notes: Either use decoction to raise temp for each rest, or use water infusion to bring it up to temp. Another option is to direct fire the kettle with the mash inside.
Key is to produce an intensely dry beer. Using single decoction mash, or to do 3 small decoctions.
*Preheat tun with strike water for 5 mins with over heated water*- just add water that is 4f above target strike temp and wait for it to reach strike temp then add grains.*

fix ibu for target 23.5
target og is 1.057-1.060 and target fg is under 1.010
compensate for temperature loss and no sparge - efficiency is 70% instead of 74%.
mash proceedure: - 10.77 pounds excluding sugar.
Strike for 145F, after 25 mins, draw a decoction of desired amount + 10 percent more for boil off during 15 minute mini decoction boils.

1.7 quarts for step to 150f () - predicting 2f loss
2.0 quarts for step to 155f () - predicting 1f loss
2.4 quarts for step to 160f () - predicting 1f loss
Keep boiling water on hand to raise temp if needed.
