Notes: Standard wit - with zest of 2 oranges and 1 lemon and 1/2 oz corriander.
1/2 the batch was fermented normally with 1 oz dry hop galaxy.
1/2 the batch was fermented to make a fruit sour. Batch was left near 100 degrees when cooling. Added Wyeast Lacto mix for 72 hours. After this, white labs brett was added with 5 lbs of fresh cranberries. Left to age in bottle for 4 months. Bottle aging since. |

Notes: Ferment at 66 degrees until about 90% complete. Then slowly raise to 69 degrees over a couple of days to finish off.
Dry hop in the primary after fermentation is complete using mesh bag. No need to do a secondary for this recipe.
Remove dry hops after 7 days, and let sit for 2 additional days.
Rack to Keg.
Changed Dry Hop from 1oz to Citra to stuff I had on hand. We'll see how this one goes. |

Notes: Pitch the yeast at 68 °F (20 °C) and hold the temperature steady for the first two-thirds of fermentation. This moderate temperature keeps the esters and phenols from getting out of hand. As the fermentation slows, slowly raise the temperature to 72 °F (22 °C) over the last couple days, which increases the activity of any still-active yeast cells and helps ensure complete attenuation.
