7g - Calcium Chloride
150–175 ppm chloride and 75–100 ppm sulfate
6 gallons after boil, 5.5 gallons into fermenter, bottled 4.3 gallons after dry-hopping.
Whirlpool = 4-5 oz. of hops in 2–3 additions over 15–30 minutes.
Dry-Hopping = 3–6 oz. of hops added during fermentation within 2 points of terminal gravity
https://beerandbrewing.com/unlock-the-secrets-of-new-england-style-ipas/
A decidedly hoppy and bitter, moderately strong American pale ale, showcasing modern American or New World hop varieties.
The balance is hop-forward, with a clean fermentation profile, dryish finish, and clean, supporting malt allowing a creative range of hop character to shine through. |

Notes: Ran off 7 gallons into boil, ended up with approximately 5.5 gallons of wort. Don't think I got as much wort as possible since rye seemed to clog mash tun a bit. Boil off was not as much as estimated by the calculator.
Only 2 gallons from first runnings, 5 from second.
All water used was spring water from Food Lion.
Actual OG 10.056, 2 packs of rehydrated yeast pitched at around 67 degrees, stirred for 5 minutes. |

Notes: Yeast starter, 38 billion cells (use Yeast Pitch Rate and Starter Calculator to estimate). Pitch yeast at 18 C and allow it to rise 3-4 degrees every day over the course of the next 3-4 days until you stabilize temperature around 32 C. If beer refuses to drop close to or below 1.008-1.010 within 2 weeks, pitch Wyeast 3711 French Saison yeast to finish out.
Hop bill: Add flameout (1 min) hop addition, take it off the heat, and let it rest for 20 minutes before starting cooling. Dry hop can be done either in one or two portions of 5 days each, with the same hop amount. Mash hops (Czech Saaz or German Tettnang/Hallertau) are added directly to the mash, or as first-wort hops, directly in the boil kettle while transferring from the lauter tun to the boil kettle, before beginning the boil. The latter option will give around 5 more IBUs, and whether or not to do it depends on if you want a slightly more bitter beer or not.
If you're feeling adventurous, you can take part of (or the whole) batch and add a New Zealand white wine during secondary fermentation, as an experiment. Let it ferment out and add priming sugar like normal. I think this will work well, but who knows? It's been done with great success at places like moderntimesbeer.com, so maybe worth a try.

Notes: The original American craft beer. Mashed in a pot on the stovetop and sparged in a collander.
An easy way to hold mash temp is to put the pot into your oven at the lowest temp. Mine goes to 170 and with a good stir every 20 min, it stays right where I want it. |
