Puree fruits and add enough water to make a thin syrup. Boil to make a thicker syrup. I estimate this reduces the PPG (because of the water addition) by about 10%.
Fruits will probably add color, but maybe not as much as dark candi syrup? I'm totally guessing 60L.

Notes: Mashed pilsner and wheat malt for 30 minutes at 150* before adding acidulated malt and lactic acid to the mash. After 75 min total mash, recirc'd as usual, filled kettle w/ 6 gal wort, raised wort to boil, skimmed precipitate, and rested 10 minutes to kill wild yeasts, then chilled to 95. Pitched lacto, purged kettle, sealed up lid w/ saran wrap. Kettle sat in hot 80*+ garage.
After 12 hours, warmed kettle gently a few minutes. After 36 hours, desired sourness was reached. Brought to boil, added salt, corainder and hops, boiled 5 minutes, then flamed-out and rested 10 minutes to kill the lacto yeast. Chilled to 70*. Racked to fermenter, oxygenated and pitched 2 packs US-05. Plan to directly keg after 10 days with bottling sugar and maybe a little yeast slurry.
Won 1st in the 4th Round of an Indiana Competition for German Beers, aka Der Hoosier Braumeister, in which home brewers and commercial brewers compete head to head.
Wonderful beer. Salt/Lemon Zest/Coriander in perfect balance for my taste. |

♦ SESSION NOTES: Missed the Weyermann Rauch Malt step. Will have it for next brew session. steep no longer than 30 minutes @ 2-4 oz max. Needs to be a fresh as possible. It will dissipate over time. http://www.thebrewingnetwork.com/post1700/ Rauchbier with Jamil and Mitch Steel. End of sparge 1.056. ♦ During the worting chiller phase capture 5 gallons of water and put PBW. After kettle is rinsed add the 5 gallons PBW bring to 140° and clean interior. ♦ 8 ounces of Midnight Wheat Malt is way too dark for what I was looking for.
♦ STANDARD BREWING NOTES:
60 mins at mash – Add tbsp 5.2 pH balancer.
60 minutes – Add 2 drops Fermcap
60 minutes – Add 5 tablespoon Gypsum for IPA
15 minutes – Add Immersion Chiller
15 minutes - Add Whirlfloc
10 minutes – Add 1 teaspoon Yeast Nutrient last
♦ Check to see if nozzle is pointed upwards
Create 7 gallons sparge water. Bring to 154° strike temperature.
Prime pump. Push water through hose.
Add grain – Sparge at 144-152° for ___ minutes (Minimum 60)
(One gallon loss during sparge process)
Water burn rate: 1-1/2 gallon per hour.
Drain GRAIN from kettle. Adjust water height of ___ (7 gallons)
Boil clean water for end of boil session adjustment.
Mash Option dark beers – Add x tablespoon Calcium Carbonate

Notes: This has turned out really well with a nice malty/toasty flavour coming through from the Amber malt. It is well balance with some hop flavour and aroma but this is secondary to the malt. I think next time I may back of on the amber malt a bit and go for 150g instead of 300g but I had some I wanted to use up.
For my taste I may up the IBUs next time but that is because I like a really bitter beer. This is probably closer to the suggested style.
I used yeast cultured from Young's London Special Ale which is reportedly the same as Wyeast 1768. The slightly better than expected attenuation could have been because of the 20 minute rest at 62oC before raising the temp to 68oC. I then mashed out at 75oC.
It's not a million miles away from something like Old Speckled Hen, but with a bit more malt and less sweetness.
