Notes: After boil, turn off pump, free drop hops into kettle and whirlpool for 15 minutes @ 180 F, then create a cone to bring hops to the center of the pot. Single chill into fermenter between 60-70 degrees while oxygenating. Pitch 3 packs of verdant. Let ferment for 2-3 days . Once fermentation complete, drop down to 60F and dry hop. Dry hop for 5 days (taste test in between). Cold crash, transfer to kegs, carbonate, serve. |

Notes: ENTIRE BATCH LOST. Turned in to bottle bombs, all bottles disposed of.
- 70 C strike temp.
- Dark grains added with 20 min left in mash (66 C).
- Used hop spider for first time.
- Forgot whirlfoc tab.
- Yeast re-hydrated and pitched at 20.5 C (1 packet), water for re-hydration may have been too hot.
- Fermenter set to 19 C.
- Volume was just on 20L from a 30L start.
- OG 1052 an 18.5 C (1053 predicted)
- Steeped tea bags in 500ml cold water (11 spearmint & 3 peppermint) strained after 3 hrs and flash boiled then added to fermenter @ 8 days SG 1022 (30/5/16)
- 1/6/16 (10 days) SG 1022 - no mint aroma but a mild mint finish,
Increased fermenter temp to 21C to try and drop SG.
- 4/6/16 (13 days) SG 1020 - no mint aroma but a mild mint finish.
- 5/6/16 Bottled using drops - FG 1020 (ABV - 4.7%)
- Bottles marked (CM+) have a cocao nib added at bottling.

Notes: Add the crushed malt to 10 quarts of 145° water and mix well. The Temperature will stabilize between 130° to 135° degrees. Steep the mash at this temperature for 30 minutes.
Add 5 quarts of boiling water to this mash. This will raise the temperature to 155°. Hold at 149°-155° for 45 minutes stirring occasionally.
Raise the temperature to 158° and hold for 10 to 20 minutes or until an iodine test indicates complete conversion.
Raise the temperature to 167°. Then pour your mash into your lauter-tun and sparge the mash with 3.5 gallons of 170° water. The volume of the wort before boiling should be about 5.5 gallons.
Bring wort to a boil and add boiling hops and boil for 50 minutes.
Add Irish Moss and boil for 8 more minutes.
Add aroma hops and boil for a final 2 minutes.
Cool the wort to about 70°-75°, strain mash and transfer to the primary fermenter and add yeast. The final batch size is 5.25 gallons. If necessary, add additional cold water to achieve this volume.
Ferment at 70°-72° for about 4-6 days or until fermentation is complete and appears to clear and darken.
Transfer to the secondary fermenter, let the fermentation complete and settle for 7 more days at 70°-72°.
When fermentation appears to be complete you may then cellar or age at 50° to help drop yeast out of suspension, but this is not crucial to the quality . |

cant remember if i added ground clove to this as well but if i did, it would have likely been 0.1 oz. it is also possible that i did 0.1 oz of ground ginger rather than what is recorded above. |

Notes: Start with 2.5g water.
Put steeping grains into a muslin bag, tie it off, and put in the water as it heats up.
Steep grains until 165F, then after you reach 170F or above, dunk grain bag and let it drain into kettle. Discard grains.
Heat to 190F, remove from heat, and add Light and Munich LME.
Heat to boiling, and follow hops schedule.
At 15 minutes, add Dark DME and return to boiling.
Whirlfloc is optional...but I use it in about every brew I make except stouts. |
