BrewDog vs Amundsen. One of a series of collaborations with European craft breweries, aimed at promoting engagement and market growth. With Norwegian craft brewers Amundsen, we are creating a mash-up of two existing beers, resulting in a coffee, chocolate and marshmallow Russian Imperial Stout. If your mash run off takes a long time, increase the temperature of your sparge water to keep the mash bed warm and permeable.

Notes: Do not use an airlock! See https://www.maltosefalcons.com/tech/guide-saisons-and-saison-yeasts about backpressure issues with WLP565. Well, that being said, just don't fill the airlock as the lid will do a better job keeping anything out of the fermenter.
Start fermenter at 19C for 3 days. Every day increase by .5C until 26C at day 17. Shooting for 1.008 and 83% attenuation as I am hoping for a slightly dry Saison to balance out the CaraVienne.
Will be using Tesco Ashbeck for the water.
Going with a 2L starter and will be setting aside one jar for a future batch.
This was an awesome batch of Saison. The Helles that was on tap almost didn't get touched until this was finished. |

Notes: Prepared a 500ml refresh starter with 70g of DME.
Added 13.5L of heated acidified strike water at 73C to mash tun for 66C infusion.
Added correct proportion of salts to the mash.
Mashed in and hit target temperature.
Refilled HLT and set HERMS to 69C. Took 30min to reach.
Turned on HERMS cycling slow to maintain mash at 66C for a further 30min.
After 60min of mash, increased HLT temperature to 79C whilst still cycling HERMS. This took 10min.
For 3min, sparged onto mash to build up head before starting vorlof.
Sparse & vorlof continued for 85min, when 30L of wort was collected in the BK.
Pre boil gravity = 9.5 bricks, 1.038 before adding sugar.
Added sugar.
Pre boil gravity = 12.9 bricks, 1.052 after adding sugar
Added correct proportion of salts to wort.
Boiled for 45min.
Added protofloc and yeast nutrient. Sanitized chiller.
At flameout added hops and whirlpools for 5min. Then dropped temp to 80C.
Continued to whirlpool for 20min then set up hopback.
Drained BK at 80C through hopback and plate chiller (slowly) to collect 21.5L of wort at 19C.
Took sample. OG = 15.1 bricks, 1.061. Spot on.
Pitched yeast then O2 wort at 1L/min for 90sec.
Put wort into fermenter fridge at 19.5 C.

Notes:
A classic German-style pilsener is straw to pale in color. A malty residual sweetness can be perceived in aroma and flavor. Perception of hop bitterness is medium to high. Noble-type hop aroma and flavor are moderate and quite obvious. Distinctly different from Bohemian-style pilsener, this style is lighter in color and body and has a lower perceived hop bitterness. |
