Notes: This beer has been a huge hit with friends. The Devils Club and Spruce tip blend perfectly with the hops for an herby and earthy IPA. Very unique. Devils Club is a very therapeutic substance of the Ginko family. It has been used traditionally as a cure-all for thousands of years. It is also known to produce hallucinations when consumed in very high concentrations. I find the devil's club produces a particularly giggly and giddy kind of intoxication, similar to red wine or tequila. Note that Devils club berries are poisonous. Only the bark/roots are safe for consumption. Like any plant/herb, some people are known to have allergic reactions to Devil's Club, so it is advised to be cautious if you've never had it before. |

Notes: Add dry yeast to top of the Wert. Place fermenter in a warm area (60-65°F).
Approx 1-3 days after adding the yeast and healthy fermentation is taking place, move your fermenter to your cool area (48-60°F). Basement floors during colder months or a refrigerator with temperature control.
Wait 7-10 days of fermentation, then allow to rise to room temperature for 24 hrs. Diacetyl rest. Transfer into a glass carboy for 3-12 weeks at lagering temperature (36-45°F). |

Notes: Add grains to 3 gallons of water and sparge to 170 degrees. One hour boil with hop regimen. Add dextrose for last 30 minutes of boil. Add whirlfloc/Irish moss tablet during last 5 minutes of boil. Add 2 gallons of cold water to wort, post-boil, and cool to 70 degrees then pitch yeast. Notes: IPA with wild hops used for everything but initial bittering (as we have no idea about the acid content in these, just that they're fresh and smell good).
Copying the mash schedule from our original IPA for this one. It includes a double infusion, 90 minute step mash done to make the beer more fermentable, drier and less sweet, which will allow the hops to shine through more.
MASH SCHEDULE:
-6.4 gallons @ 154.5 F to reach 144 F, hold for 30 minutes (beta sacch rest)
-Increase to 151 F and hold for 60 minutes (alpha sacch rest)
-Sparge @ 168 F to collect 3.5 gal
-Recirculate to collect 3 gal for 6.5 gal total
9/4/15: Brewing now. So far we have good efficiency, gravity looks solid and yield is right on.
10/17/15: Somehow this got pretty messed up during fermentation. We're probably just gonna dump it because we can't figure out what to do with it and it doesn't taste good/as planned at all. Our first wasted batch, but I'd say that's pretty solid considering we've been doing this for a couple years and have brought every other batch to fruition. Oh well. |

Notes: Mash at 150F for 60 min. Add First Wort Hops when entire boil volume approaches 160F. 90 minute boil. 0 Minute hopstand hops get added at flameout and stand for 45 minutes. 0 min Aroma hops get added at 160F during chilling. Pitch and ferment 70F. When fermentation slows, rack to purged keg on top of bagged (and weighted, you want them submerged but not interfering with dip tube) whole hops and let fermentation finish at 70F for 5 days under a little pressure. Drop to 38F or so and force carb. Carb to 2.0vol and enjoy fresh! |
