This beer has a big, clean, and chewy grain bill that explodes with hops notes of pineapple, blueberry, and pine resin.
DIRECTIONS:
Mash for 40 minutes at 154°F (68°C), then for 10 minutes at 162°F (72°C). Mash out at 171°F (77°C). Boil for 60 minutes following the hops and additions schedule. For the lactose, remove the kettle from the heat, stir in the lactose, return the kettle to the heat, and bring it back to a boil for the remaining 10 minutes.
After the boil, chill the wort to slightly below fermentation temperature, about 64°F (18°C). Aerate the wort and pitch the yeast. Ferment at 66°F (19°C).
We do two dry-hop additions: one at 30 percent attenuation (about 1.048) and then again at about 1.024. We divide the dry-hop total weight evenly between the two additions. |

Fermentation:
You will get the best flavor results if you have the ability to raise the temperature slowly as the end of fermentation approaches. Start your fermentation at between 17°C. Keep the temperature on the cool side until the most lively part of the fermentation is complete.
As the fermentation begins to slow, let the temperature rise slowly over the last two or three days, and allow it finish out between 21-24°c. The early cool temperature will help control ester and phenol production while the temperature climb will help with attenuation and cleaning up DMS. |

Notes: Barley Grown in the backyard and malted in the sink. roasted some and toasted some and left some pale. Poor efficiency. accidentally almost boiled the mash. The centennial hops are growing of the front of the shed and were picked during the boil and dumped in at flame-out. Picked some more and dumped them in the fermentor after a couple of days, and they stayed in for 5 more days. Have not tried yet, but was a nice pale colour with very mild hop aroma at bottling. only got 10x350ml bottles. Put a few fresh hops in two of the bottles for fun. I'm expecting that it won't highlight the super fresh hops the way i was hoping for. But maybe carbonation with rouse the aromas! |
