Mash in at 150°F (66°C) for 45 minutes. Run off into the kettle and boil for only 20 minutes. Don’t use any kettle finings. At flameout, add the Citra hops and whirlpool for 5 minutes before knocking out into the fermentor. Maintain the primary fermentation temperature of 68°F (20°C) and follow the dry-hop schedule. Chill 3 days after the last dry-hop addition and bottle or keg shortly after the bulk of the sediment has settled.
BREWER’S NOTES
Make sure your grist crush isn’t too fine. The high proportion of flaked oats can give you a stuck mash, especially without a beta glucan rest, which is to be avoided to maintain body. Expect to sacrifice some extract efficiency and adjust accordingly. Ideally, you want to use water low in sulfates and at least 150ppm calcium to accentuate fullness, rather than a crisp sulfate bite, in the body and mouthfeel of the beer. The shorter boil and avoidance of finings maximize haze. For a juicy beer like this, you don’t want to drop out those protein-polyphenol complexes in suspension. |

Notes: Et veldig mykt og godt øl. Merkbar sødme og lakrissmak fra lakrisroten, noe som balanseres veldig godt med mørk sjokolade og kaffesmak fra bruken av den engelske Pale chocolate.
Lakris er veldig godt i porter og har en rekke smaker som harmoniserer med smak av røstet malt. Det inneholder imidlertid noe som heter glycyrrhisinsyre, som virker 50-150 ganger så søtt for ganene våre som sukker.
Dette er en oppskrift løst inspirert av smakene til Sumbel Porter, en meget god porter fra Ægir.
Dersom du kun ønsker et hint av lakris kan du bruke ca. 1gr per liter, men for de som er glad i lakris så kan det være godt med opp til 50g. Lakrissmaken kan virke kraftig til å begynne med, men vil modnes og bli litt mildere og rundere. |

Notes: Mash all grains for 60 minutes at 155 degrees.
Sparge at 170 degrees.
75 minute boil with hop regimen above.
Primary ferment at 65-68 degrees for 10 days with Belgian Abbey ale yeast.
Rack to a secondary, add Brett yeast and wine-soaked oak chips. Ferment for 10 weeks, then add the Lacto culture and ferment for 4-6 months. Beer will have more sour character with longer aging. Rack to a keg and force carbonate, or if bottling include a small amount of fresh Abbey Ale yeast with priming sugar.

It is assuming a 5 gallon batch,
3 gallon - 60 minute boil, and adding the extract at the beginning.
If you can do a full boil you probably wouldn't need the extra 1oz.Citra at 60 minutes.

As far as First Wort Hop / Steeping hops.... I would add them with around 10 min left in steep (before rinse), and put them in a different bag than the grain. Then you can leave them in for the whole boil.
