brew day.
removing the hallertau mittelfruh and saaz in favor of nobility. adding some hallertau magnum i have in the fridge and then im going to have to add some warrior to get the rest of the way on ibu.
i picked up 10 gallons of glacier RO water from publix and added all treatments to strike water. next time prob need to get 15 gallons.

copied into new recipe to change to 10 gallons. this time will be using reused bavarian lager 2206 yeast from maibock 5 gallon batch. i think half the cake in each fermentor will be ok.
Redoing the water, not sure what it was set to before....
appears there is no real way to get a decent water profile for light lager from my house water. hopefully i can get a couple of those 5 gallon jugs and not have to buy 10 damn gallon jugs from grocery
im not sure but i think i can just add all my water additions to the mash water and be done with it? use straight distilled for the sparge

brew day. changing recipe to reflect saaz are actually 2.8 instead of 3.5. and i accidentally added .5 oz at 30 and flameout instead of .25 and .75 respectively.

copied into a new recipe today to mess with water profile. thinking about starting with distilled or purified (not sure if this is the same as RO) and building. looked at the pilsner preset profile which is very soft but that is just base water and suggested will not work correctly for mash and yeast health! instead looking at actual target profiles for czech pils i found online, debating between two (one from AHA forum, other from braukaiser) link in the water profile.
be sure to add acid only to the mash.

i rushed the end of this brew to have it ready for a trip to nj.
i believe i let it warm to 70 on day 10
cold crashed on day 11
kegged and carbed on day 12
canned on day 13
the cans turned out a little weird once we got to nj. diacetyl or dms or something. maybe a packaging issue.
when i returned home (day 25) the beer is still crisp fresh tasty and now clear.
overall i wouldnt be scared to try this fast fermentation schedule again, it turned out pretty clean. probably would want to start the diacetyl rest earlier and maybe for one more day. and it would be ideal to cold crash for at least a week before kegging. maybe two if you can stand it :-)

brewed last night. original recipe i had 65% efficiency but came out at like 72. wanted to land at 4.9% but this will be 5.5%. oh well.
i think my efficiency is actually decent for 10-11 lbs grain, then goes down as i add more and more grain.

1. 50deg for first 48 hours
2. raise one degree each day for 10 days
3. on day 11, allow temp to free rise to (warmest temp in brewery, but lets just say 70)
4. 9 days later start the cold crash |

4.83 AAU Czech Saaz hops (1.38 oz./39 g for 3.5% alpha acid) (60 min)
5.8 AAU Czech Saaz hops (1.67 oz./47 g for 3.5% alpha acid) (30 min)
2.9 AAU Czech Saaz hops (0.83 oz./24 g of 3.5% alpha acid) (10 min)
2.9 AAU Czech Saaz hops (0.83 oz./24 g of 3.5% alpha acid) (0 min)

Step by Step
Mill the grains and dough-in targeting a mash of around 1.5 quarts of water to 1 pound of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 154 °F (68 °C). Hold the mash at
154 °F (68 °C) until enzymatic conversion is complete. Infuse the mash with near boiling water while stirring or with a recirculating mash system raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (25 L) and the gravity is 1.044 (10.9 °P).
The total wort boil time is 90 minutes, which helps reduce the SMM (S-methyl methionine) present in the lightly-kilned Pilsner malt and results in less DMS (Dimethyl Sulfide) in the finished beer. Add the first hop addition with 60 minutes remaining in the boil. The other hop additions are at 30, 10, and zero minutes left in the boil. Add Irish moss or other kettle finings with 15 minutes left in the boil.
Chill the wort to 50 °F (10 °C) and aerate thoroughly. The proper pitch rate is 20 grams of properly rehydrated dry yeast, four packages of liquid yeast or one package of liquid yeast in a
9-liter starter.
Ferment around 50 °F (10 °C) until the yeast drops clear. With healthy yeast, fermentation should be complete in two weeks or less, but don’t rush it. Cold fermented lagers take longer to ferment than ales or lagers fermented at warmer temperatures. If desired, perform a diacetyl rest during the last few days of active fermentation.
Rack the finished beer to a keg and force carbonate or rack to a bottling bucket, add the priming sugar, and bottle. Target a carbonation level of 2 to 2.5 volumes.
A month or more of cold conditioning at near freezing temperatures will mellow some of the flavors and improve the beer. Serve at 43 to 46 °F (6 to 8 °C). |

Used 16g of yeast (1-1/2) packets.
4/11/15: Preheat mash tuns with 1-1/2 gallon boiling water for 30 min.
Boiled 3-1/2 gallons strike water to 168 degreed. Added grains and mash went to 155 degrees. Added 1 quart ice water and dropped to desired 152 degrees.For mashout added 6.5 quarts boiling water. Only raised it to 166 degrees. Let sit for 10 min.
Transfered to kettle and boiled. Added 1oz Perle for 60 min. ! oz of Sterling for 20 min and 1 oz Sterling for 10 min.
Cooled to 55 degrees and racked to fermenter. Added yeast and set freezer to 50 degrees. Initial Brix 10.8
4/21: Removed from freezer for diacetyl rest in basement. 61 degrees in basement.
4/23: transfered to secondary. SG reading of 1.010. Set Temperature in Freezer to 50 degrees
4/24: lowered freezer to 47 degrees
4/25: lowered to 44 degrees
4/26: lowered to 40 degrees
4/27: lowered to 37 degrees
4/28: lowered to 34 degrees
5/28: raised to 50 degrees in prep of bottling next day
5/29: Boiled 2 cups water and added 3.5 oz of corn sugar.
Transfered to bottle bucket. Final SG reading 1.006
