Notes: 2/15/16 Whirl Pooled and cooled to 65 degrees within 20 minutes. Orange peel and hops at 5 and 0 minutes were put in hop bags.
I had HORRIBLE efficiency. Had a 52%, which if you punch it in would make a 5.2 abv beverage. I forgot to give the mash a stir at the it's 60 minute mark and I let the water level drop below the grain line once or twice.:S Should be good either way, but I was interested in more malt character.
I was expecting a 75% efficiency. If that would of happened, IBUs would have lowered about 10 pts. and the OG would have hit up near 1.060.
I'll let you know what happens; for now I'll RAHAHB. cheers!
Tasting Notes:
4/12/16
Nose-bubblegum, sweet yeast character
Retains good a good head, and has a great mouth feel.
Color- slightly darker than expected. More pils color.
Mouth- Nice citrus provided by the hops as the light bitter creeps up after. Smooth, sweet wit beer characteristics slightly overpowered by hops. Does not quite meet BJCP category but defiantly a keeper. A friend called it a hoppy wit. I'm not quite sure what a good white ipa would taste like, considering what I have tasted, this is great.
Next time I would up the pilsner about to 60% and lowering the others to compose the 40 of the grain bill. Perhaps dry hope with Cascade or Ahtanum.

Notes: This is the re-brew of a Pils that placed 3rd in the 2018 NHC first round in San Diego. The goal was something similar to Ayinger's Bavarian Pils. This beer was lucky enough to place 1st in the 2018 NHC Final Round.
Note: the Pils malt used in this recipe is Weyermann Barke Pils. Give it a try.
Additional fermentation/lagering notes: with the high pitch rate this beer completes primary fermentation (aka gravity stabilizes) in less than 10 days at which point you can keg it. On about day 7 or 8 I let it rise to a maximum of 62F to make sure it gets to terminal gravity. I lagered it in my keezer at 38F for 4-5 weeks, but if the brewday and fermentation went well it will taste very good sooner than that. If you use gelatin as I do it will taste great by 2 weeks in the keg. |

Notes: Since there is no where to add steeped grains, I added them to the adjuncts column. Steep at 150F for 20 minutes.
I used filtered tap water.
Very slow fermentation.
I steamed my oak chips in a vegetable steamer, put them in a grain bag with 4 glass marbles and sunk them to the bottom of my secondary. After oak chips have been in secondary fermenter 1 week, taste every second day to find the taste you like, then bottle. Oak chips may be soaked/steamed in whiskey also.
Bottle condition AT LEAST 3 weeks. Best after 6 weeks. |

Brewing in Anvil 5.5 gal kettle.
-Hops & spices added to a hops bag to lessen the trub.
-Add 4 oz maltodextrin during last 10 minutes of boil with remaining hops & spices.
-Add Flavorings (Vanilla extract) prior to adding yeast for primary fermentation.
-Primary fermentation in the kettle or 3 Gallon BrewDemon for 14 days.
Optional: Rack to secondary fermenter for 14 days to add spices and to clear a bit. Racking should stir up those lazy yeasties.
For this batch I will use Mangrove Jack - Belgian Ale Yeast M41 (This yeast emulates the intensity and complexity of some of the best monastic breweries in Belgium, with spicy and phenolic tones. The high attenuation and alcohol tolerance of this strain allows you to brew a huge range of Belgian beers. Suitable for Belgian Strong Golden and Belgian Strong Dark Ales.)
