The goal was something similar to Ayinger's Bavarian Pils. This beer was lucky enough to place 1st in the 2018 NHC Final Round. Note: the Pils malt used in this recipe is Weyermann Barke Pils. Give it a try. Additional fermentation/lagering notes: with the high pitch rate this beer completes primary fermentation (aka gravity stabilizes) in less than 10 days at which point you can keg it. On about day 7 or 8 I let it rise to a maximum of 62F to make sure it gets to terminal gravity. I lagered it in my keezer at 38F for 4-5 weeks, but if the brewday and fermentation went well it will taste very good sooner than that. If you use gelatin as I do it will taste great by 2 weeks in the keg.

Mashed In and temp dropped to 156 degrees and started 75 minute timer. 1.047 Preboil Gravity on roughly a 4.25 Gallon Boil. 1.061 OG on roughly 3 gallon Fermenter Volume and Yeast pitched at 70-72 degrees at 5:30pm on 10-30-16 (Sunday) I changed Brew House Efficiency to match OG of 1.061. Did not see Airlock Activity until Wednesday evening (Three Days Later) On Saturday at 4:10pm the 5th I Dry Hopped with an ounce of Citra, 1/2 ounce Simcoe and an ounce of Mosaic after High Krausen. I will let this Dry Hop until Wednesday the 9th.

Crush whole grains and add, with flaked grains as well, to liquor. Hold mash at 152° F for 90 minutes. Runoff and sparge with 12 quarts water at 170° F. Add DME, stir well, bring to a boil. Add East Kent Goldings hops, boil 45 minutes. Add Saaz hops, boil 15 minutes. Remove from heat, remove hops if possible. Add coriander and orange peel, steep 30 minutes. Pour into fermenter along with enough pre-boiled and chilled water to make up 5.25 gallons. Cool to 70° F, pitch yeast. Ferment at 65° F for two weeks, rack to secondary and condition cooler (45° F) for three to four weeks. Prime with DME, bottle and age three to four weeks at 45° to 50° F. Serve at 40° F in a heavy glass tumbler. All-grain option: Replace the dried malt extract with another 1.5 lbs. each of pale malt and malted wheat. Increase mash water to 12 quarts and sparge water to 15 quarts. Mash time and temperatures will be the same. Proceed as above from boiling. All-extract option: Omit pale and wheat malts. Steep flaked wheat and oats in 3 gallons at 150° F for 30 minutes. Remove grains. Increase DME to 5 lbs., proceed as above from boiling.

Taste was slightly tart, not as much mouthfeel as I'd like.

Somehow I managed to delete the email as soon as I read it. They confirmed that the Magnum is only for bittering and they get about 20 IBU's from it. The rest of the IBU's are made up from equal amounts of MOSAIC, CHINOOK & SIMCOE in the late boil. They dry hop with all three hops at about 5.5 grams per liter. However they don't use an equal amount of each one of the hops they use 2 parts and 1 part each for the other two. I'll ether email them back or make a guess, I've got a week or so before I need to worry about dry hopping. Anyway I'm going to go with the following:
