| Notes: Mash at 150F for 60 min. Add First Wort Hops when entire boil volume approaches 170F. 90 minute boil. 0 Minute hopstand hops get added at flameout and stand for 45 minutes. 0 min Aroma hops get added at 160F during chilling. Pitch and ferment 60-62F. Primary for a total of 14 days so that everything clears up nicely, cold crash for 2 days at or below 40F, then rack to secondary and bring back to ferm temps. Add first dry hop, 2 days later add second dry hop and filter and bottle at the end of day 4. Bottle and condition for 21 days at 62F. |

Notes: Sierra Nevada Clone, with a touch of smoke and chocolate ...
Brewed 04/28/12. Accidentally overshot temperature to 190 deg F. on seeping cycle. All other brewing functions normal. Pitched hydrated yeast at 68 deg F. and dry hopped in the primary.
O.G. was 1.057 as averaged between the two buckets. Fermented four days and racked to secondary on 05/02/12. Fermentation was complete five days later. Allowed to settle until 5/15, but some cloudiness persisted, I assume caused by excess proteins released when the seeping water got too hot. Bottled nine six-packs on 5/15 with carbonation drops. Kegged and force carbonated the remainder. Final gravity was 1.011 as corrected for alcohol with the More Beer spreadsheet. Taste is excellent ... fruity, with a nice malt-hop balance and distinct hop nose. The smoked malt rounds out the flavor, without overpowering the base malt, giving the beer a unique character that is hard to describe. I may be able to elaborate on that as I sample it more.
The color is spot on, but a little cloudier than I was hoping. Next batch I will watch the seep temps a bit closer and use some Irish Moss to clear it up a bit. Overall, a very nice and VERY drinkable ale. |

Notes: First class Brewing Project done with Extract recipe created by students on February 17,2018 as part of the Into to Brewing class, in the Brewing Sciences program at Trociare College in Williamsville,NY under direction of Dr. Brian Barrow PhD.
The class developed a recipe on the spot with what a set DME base, and a table full of other steepable specialty grains and hops. After they picked a style directions the class worked together on deciding what grains would give them the desired adjunct characters they were looking for and determined how much to use in a matter of minutes also pairing the hops that would best accent the beer in bittering and aroma. Dr. Barrows then informed them that they were going to split that beer in the end into 2 batches and pitch a different WhiteLabs Yeast in each (WLP001 &WLP530), along with the late addition of Belgian Candy syrup D-180 to the fermentor containing the WLP530 Abbey Yeast. To show how two beers with the same base can be affected with simple additions and simply changing the yeast. This is the first of hopefully many beers this class does together at Trocaire College in the Brewing Sciences Department. |

| Notes: This beer hit 76-78 degrees for 2 days while in the fermenter. I kegged half of it after about a month in the fermenter and let the other half continue to ferment. Because initial keg was not fully fermented (1.018) the first bit was sweet and pretty cloudy. After a couple weeks in the keg it's cleared up and tastes great. I think the other half will taste much better since it will be fully attenuated. .....the other half never fully attenuated, looking back, I've realized that it's because I did about 2-3 brews using the BIAB method and that method causes fermentability issues because of the thin mash. Something to do with enzymes. I will brew this beer again but maybe simplify the grain bill. |
