Notes: This is based on the BrewUK extract recipe for Rocker APA but with the partial 20 pint boil. Only 1kg of extract is used for the first hop boil with the other 2kg added for the final 15 minute 2nd hop addition. This means the IBU value given above will be short by quite a margin! It is more likely around 55 to 60. I have added citra hops to the boil and dry hop and tweaked overall hop balance slightly so it brings down the bitterness slightly overall but with a more complex and citrus hop flavour (hopefully!).
First batch achieved final gravity of 1.010 after 3 weeks in the fermenter. Put in pressure barrel to condition with sugar primer made with 70g golden granulated sugar. |

Create 8 gallons sparge water. Bring to 154° strike temperature
Prime pump. Push water through hose.
60 minutes – Add tablespoon 5.2 pH balancer
Add grain – Sparge at 152° for ___ minutes (Minimum 60)
(One gallon loss during sparge process)
Water burn rate: 1-1/2 gallon per hour.
Drain GRAIN from kettle. Adjust water height of ___ (7 gallons)
Boil clean water for end of boil session adjustment
Mash Option dark beers – Add x tablespoon Calcium Carbonate

In 2 Gallons Water steep grains @ 152 Degrees F for 60 mins.
(it's easier with a grain bag)
using a Colander rinse grains with hottest tap water you got into the mash container til it runs clear.
Dissolve the LME OR DME and Other Sugar(s) you may be adding in the hot wort and bring to a full boil.
boil for 90 mins. (a tradition boil is 60 mins)
once boiling hop according to schedule.
Bittering hops first @ 90 or 60 mins
Flavoring hops Second Usually @ 45-30 mins
Aroma hops @ 20-15 mins
Irish moss @ 15 mins
Cool wort to 75-80 Degrees F.
re-hydrate yeast in 1/4 cup water @ 90 Degrees wait 20 mins then stir and wait 20 mins again or til foamy.
pitch yeast in Cooled wort and aerate.
top off with cool clean water to 4 Gallons or so in a carboy and water Lock it then wait a week or til bubbles are less than one every 30 secs.
rack to secondary Carboy (Leaving the First Sedimentary Cake Called a trub in the first Carboy) for one more week for Clarification.
Siphon to bottle bucket (Leaving the secondary trub) and pitch 3/4 Cup dextrose dissolved in BOILED tap water and cooled to ambient temp.
keg or bottle! if bottling wait a couple weeks then crack one open and have a taste!

Notes: Can use altbier yeast (WLP 036) also, but Kölsch (Wyeast 2565 or WLP029) is more attenuative (or also a Belgian Abbey strain, or WLP 810 SF Lager). Could also add some oak cubes for a wood-aged version. Lager for 1-2 months.

Notes: I use a 1500 ml yeast starter, pour off the starter wort, and pitch the yeast sediment mixed with the new cooled wort. I cool the starter and the wort to 52 degrees Fahrenheit. I ferment at 50-52 until activity almost stops and have a 4-5 day diacetyl rest at 55-56 before transferring to the secondary fermenter. This yeast has always produced a flavorful and authentic Helles. It also makes a great bock. |

Notes: WOW I usually do not like wheat beers but WOW! This is taste amazing. Very simular to blue moon but with a heavier mouth feel and hint of honey in the finish. I will brew this one again!
I cracked A bottle for a few friends while I was having a little beer tasting party at my house and watching the Portland Timbers mash FC Dallas for the 3rd time this year. The beer was not yet carbanated but had a very distinct honey flaver and honestly tasted just like blue moon. |
