| Notes: Heat 4 gallons of water to strike temp and add grains. mash at 150 F for 90 minute's. in a separate kettle heat 2.50 gallon's of water to 168 F. remove grain bag from kettle and place in kettle with 2.50 gallon's @ 168 F. dunk sparge for 10 minutes. remove bag and squeeze it into the wort. combine both wort's into boil kettle and adjust volume if needed. |

Notes: This recipe originally started as an "odds and ends" beer (using up the various malts that I had left over from previous recipes).
I later decided to dub this an American strong ale because it uses malts from a wide variety of countries (Belgium, UK, America, Germany) much like America's own heritage! It also utilizes Falconer's Flight hop blend wich showcases the bright, citrusy character of hops native to the Pacific Northwest.
As for the "BearShark" moniker, well that's for me to know and you to try and figure out! |

Notes: DIRECTIONS
Mash at 154°F (68°C). Boil for 60 minutes with a good, rolling boil, following the hops and additions schedule. After the boil, chill the wort to slightly below fermentation temperature, about 60°F (16°C). Oxygenate the wort very well and pitch the yeast. Ferment between 65°F (18°C) and 75°F (24°C) for 30 days, adding cinnamon at the start and tasting every 12, 24, 36 hours until you reach the desired level of taste, remembering that the flavors will meld over time.
TIPS FOR SUCCESS
Don’t sweat the cinnamon too much. During fermentation with the cinnamon, remember it will fade over time, so it’s best to start out with both the cinnamon and licorice a bit larger in the presentation than you may want. Time is the key to this beer coming together. |

Notes: Still aging this one at 8 weeks in secondary. Tried it yesterday and it is out of sight tasty. It is still a little hot with alcohol, but that should age away. This is a recipe to make a big batch of and store it away in some bottles and taste it over time.
Ended up kegging and this thing is wonderful. Nice creamy and stable head on it, plenty of boozy warmth too. Could use a touch more hops to help with balance, but overall one of my favorites that we have made. |

Notes: My attempt at a Small IPA. . .w00t.
Mash at 150F for 60 min. Add First Wort Hops when entire boil volume approaches 170F. 90 minute boil. 0 Minute boil hops get added at flameout. 0 min Aroma hops get added at 175F during the chilling. Pitch and ferment 68F-72F (basically room temp). Primary for a total of 14 days so that everything clears up nicely, cold crash for 2 days at or below 40F, then rack to secondary and bring back to ferm temps. Add first dry hop, 2 days later add second dry hop and filter and bottle at the end of day 4. Bottle and condition for 21 days at 70F. |
