This beer will be made in the Braumeister 50 L. A guide in dutch can be found here: https://brouwland.com/nl/index.php?controller=attachment&id_attachment=9064
Shopping list:
- Malts: Ask to ground your malts in the shop. Ideal grounding size for the Braumeister can be found here: https://www.speidels-braumeister.de/en/beer-brewing/tips-and-tricks.html . Buy: 1) 10 kg of pilsner malt, 2) 0,75 kg of CaraMunich OR CaraVienna malt, take the one with lowest color version you can find.
- Sugar: I prefer clear candi sugar. Buy 1,75 kg.
- Hops: you can experiment with Saaz, Tettnanger, Hallertau, Magnum and Hersbrucker. Saaz and Tettnanger are bittering hops (60min) of choice. All can be used as aroma hop (15min). The amounts should be adjusted based on the AA% content on the package.
- Yeast: Try Belgian Abbey yeast and Norwegian Kveik yeast. You can also try co-fermentation.
Process notes:
- For mashing add 55L of water in Braumeister. Only malts are added during this stage (candi sugar is only introduced during boil). Set all mash steps in Braumeister. No sparging is performed (only leaking).
- After mashing bring to a boil for 60 min. At start boil add bittering hop. 15 min before the end add a whirlfloc and the aroma hop. After this start to introduce the candi sugar. Try to avoid burning the sugar!

With various itterative refinements.
Yeast Starter -
1 packet of S-04 yeast
Using stir-plate
DME Required: 175 g in 1.7L (1.036 wort)
Resulting Pitch Rate: 1.08M cells / mL / °P
Added 1/2 tsp yeast nutrient and boiled for 10 mins.
Cooled to 15'C, airated, and added yeast.
On stirrer for 18h. Raised grad to 17'C.
Off stirrer for 36h.
Settled and cleared nicely without need for refrigeration.
Reduced temp to 15'C slowly before pitching.
Fermentation Temperature Control -
S-04 appears to the the optimal yeast to use for this recipe, but it is CRITICAL with this yeast to maintain careful fermentation temperature control.
With S-04, it is highly recommended to ferment and pitch very cool. Recommend pitching at ~60F (15.6'C) and fermenting no higher than 63F (17.2'C). Ideally no higher than 65'C (18.3'C), and absolutely not above 68'F (20'C).
Fermentation and Dry hopping -
Only using a primary fermenter for full process (to avoid any unnecessary oxidation or risk of contamination).
Ferment for 14 days just to be safe, then toss in dry hop for 10 days (hop pellets loose in fermenter - no hop bag), then cold crash for a few more days, and then keg. cold crashing is important for high hopped beers like this else their flavour could more quickly deteriorate over time due to any remaining hop material left in suspension when kegging.
Have thinned out the mash from my initial attempt for better mixing and easier temperature control.
Have left brewhouse efficiency at 70%, although achieved 85% on 1st attempt at this recipe, resulting in higher ABV than planned. |

Strawberry Peach Milkshake IPA
NEIPA MILKSHAKE
6 gallon batch
OG: 1.083
FG: 1.021 (because of lactose)

60 min boil 60min mash @ 152.
Mash ph. 5.38 using distilled water
London Ale III 1318 (1.6L starter 24 hours before and pitch right off stir plate w/ no decant)
11lbs-2row
2lbs- flaked oats
2lbs- flaked wheat
2lbs- white wheat
1lb- Lactose (last 5 min of boil)
.5lbs- honey malt
.5lbs- crystal 10
6oz of citra, 6oz of denali, 6oz of Eldorado, 6oz of galaxy.
4ozs of each hop for a 30 minute hop stand at 180 degrees and let the temp free fall
2.02:1 chloride(17 grams) to sulfate(7grams) ratio also 3ml of lactic acid (all added to mash)
24 hours in to fermentation add 1oz of each hop.
3 vanilla beans spit, scraped, chopped, and soaked in vodka for a week.
4lbs strawberries and 2lbs peaches. (both frozen not fresh with no special treatment)
Once FG is reached and stays the same for 2 days I put the fruit (blended), vanilla bean tincture(dump all in), and 1oz of each hop in secondary (rec putting the vanilla bean tincture in first, then hops, then fruit, it seems to hold the hops down a little longer and keeps them from getting pushed to the surface) and rack beer on top through closed transfer. Let secondary sit for 5-7 days then cold crash for 48 hours. Then rack to keg through closed transfer. I carb mine at around 2.4vols of Co2.
I didn't post water amounts because everyone's system is different, so your chloride to sulfate grams might be a little different. You want to shoot for around 200ppm:100ppm
