Notes: Created for a customer based on this post by Morrey on Homebrew Talk: Along with my buddy fellow HBT member Key West Brewing, we exchanged ideas about the best way to create a Margarita Gose without overdoing things, but to create a taste profile that gets your attention.
I started the 5G batch with a basic 50/50 wheat to 2 row base and kettle soured with L Plantarum down to 3.24 ph. I kept the Saaz hop bill low (8 IBU) during the boil following souring. I was generous with a full ounce of pink sea salt and an ounce of coriander knowing I wanted a salty flavor profile with this beer.
The 1.040 beer finished nicely at 1.008 with US-05. First time I made a sour with dry yeast and it worked as well as any liquid like WLP001 or WLP029 I had used prior. I'll stick with US-05 from now on.
During fermentation, I zested 4 small limes taking the green skin with a vegetable peeler leaving the white pith behind. I soaked these lime peels in 3/4 cup of good anjeo tequila to make a tincture. The limes marinated in this tincture for two weeks while beer was in primary.
When racked to keg, I strained the zest and pitched the tincture while siphoning beer to keg. My initial taste was very "limey" but I was lacking tequila depth for my tastes. I next took a cup of the same tequila in a mason jar and added two medium toasted oak cubes. My goal here was to emulate a beer that was aged in a tequila barrel. The tequila picked up a really nice oaky aroma while aging one additional week.
In the meantime while this oak tincture was infusing, I was carbing the keg and sampling. The lime calmed down perfectly and needed no additional adjustments. I then pitched the oak infused tequila tincture and let it rest several more days.
I hate to sound self-serving, but this has got to be one of the best beers I have ever made! The salt balances the lime and the oak is very subtle but adds in with the hint of tequila making this a perfect margarita style. Glad this is a relatively low ABV beer since I can't seem to stay away from it!
Just wanted to share........:mug: |

Notes: Recipe for a classic Bohemian Pilsener
This is a 38L batch. Two 5-gallon fermenters, not the FastFermenter. It's too much work to only yield 26L.
It's a decoction mash too, so you need to have a second burner and a s/s pot that will hold up to 10L or so. Try to organize it so that the 2nd burner is close to the mash tun. You will have to carry 10L of hot steaming mash back and forth!
I BOUGHT A NEW S/S pot, with about twice the capacity as my current one so I can do larger decoctions without worry. So consider modifying the steps to start with a larger volume in the mash tun, which would require larger decoctions.
BUY A 3.5 Kw Induction Heater instead of using the gas burner. Safer, easier, and probably faster.
**YEAST**
My preference is ESCARPMENT LABS CZECH LAGER LIQUID YEAST but any true lager yeast could be used.
Set up a starter two days before the brew. It should follow the "Pro Brewer 1.75 lager" setting on the BF Yeast Calculator. Normally a two-step starter is required.
Note: increasing efficiency for this recipe. 55% is too low. For SaltMines5, it predicted 1.049 and I got 1.060. I've set it to 60%
and dropped total grist by .5 Kg.
**GRIST**
Increased it a bunch with salt mines 4, but maybe too much so, as I just said above, I'm dropping it by .5 Kg. Looking to get around 1.052, but I'm still cheating on the high side. Dial it in closer in the future. (SALT MINES 7 was very close to 1.052.)
700g acid malt is what was required for SALT MINES 7 and I still didn't get to 5.2. I've set this master to 700g but monitor this too.
**DECOCTION MASH**
Use mash cheat sheet at google drive in my beer and brewing folder.
Dough in (protein rest) and first decoction
-------------------------------------------------------------
* Bring HLT to 134F and dough in 19L.
* - Strike temp = 122 °F (50 °C). Hold for 10 minutes (maintain until return of first decoction)
* Pull a thick decoction: one-third to one-half the mash; s/s pot is ~80% full and weighs ~ 9.4 (10.9 Kg minus tare of 1.5)
* Heat the decoction to 150°F; hold for 10 minutes
* Heat the decoction to 162°F; hold for 10 minutes
* Heat the decoction to a boil; boil for 20 minutes. ('boil' means visible boil plus 208F thoughout, with lots of stirring.)
Beta Amylase rest and second decoction
-------------------------------------------------------------
* Return the decoction to the mash, strike temp = 144–147°F ; hold 15 minutes (Maintain with HERMS, if necessary, until return of second decoction.)
* Pull a second thick decoction one-quarter of the mash; s/s pot is ~65% full and weighs ~7.5 (9.0 Kg minus tare of 1.5)
* Heat the decoction to 162°F; hold for 10 minutes.
* Heat the decoction to a boil; boil for 10 minutes.
Alpha Amylase rest and mashout
-------------------------------------------------------------
* Return the second decoction to the mash, strike temp = 158°F; hold for 30 minutes.
* Use HERMS to raise temp to mashout 170F
* get a sample before you sparge. (For SaltMines5, the gravity was 1.096 at this point!)
* Sparge and lauter as usual
**HOPS**
Use 450 alpha points (my system - g * AA%) or 16 AAU (BF system - ounces times AA%) or 30 IBU (BF-reported) of a noble hop. Normally Saaz or Hallertau. Ideally, all of those values should line up with the same values.
Do the first wort hopping thing (https://byo.com/article/first-wort-hopping-techniques):
Take a quarter of your bittering hops and toss them in the kettle as soon as there is wort heating in it. Don't wait for it to reach a boil. Throw the rest in when it reaches a boil, and boil for the usual 60 minutes.
**FERMENTATION**
This recipe has occasionally had problems with sluggish fermentations. And DMS issues. Consider krausening in the future as a remedy for such problems. https://byo.com/mr-wizard/krausening-for-homebrewers/ |

Notes: Once the primary fermentation of your beer is complete, sanitize your secondary fermentation vessel.
Slice the vanilla beans lengthwise and open them up.
Scrape the tar-like interior of the vanilla bean out of the husk and put it and the husk into the bottom of the secondary fermenter.
Rack the beer on top of the vanilla beans before placing the lid and airlock on the secondary fermenter.
Wait 2-4 weeks for the vanilla to extract into the beer. Sampling periodically is fun, but not strictly necessary, as it will be difficult to get too much vanilla in the beer. (This is my opinion, but it might just be because I love vanilla)

Notes: Brewed as a "steam" lager version with S-23.
Also want to try US-05 for more peach/fruit yeast profile and may try WLP860 Helles yeast slurry.
If more of the actual Lone Star flavor profile is desired, corn may be better adjunct to get the sweetness and hops might need to be Willamette for bitter or maybe smaller additions to slightly lower IBUs. As is, this hop profile is subtle but definitely present and the Saphir adds a little light fruit/citrus and the Hallertau Blanc adds a little dry white wine to the finish.
Used Blackland Pale Moon 2-row for this recipe and it's extremely malty in flavor. Much richer flavor than American beers and more like European commercial lagers.
In a glass out of the keg or poured from the bottle it's pretty great. Drunk straight from the bottle, it loses its malt character. |

Notes: trying to make hardywood singel but no attempts online! going off of this :
https://byo.com/component/k2/item/2827-belgian-blond-style-profile
adding the simple sugar to fermentor not during the boil but a couple days into fermentation. will probably dissolve in a little water.
meanwhile trying to hit the official hardywood singel stats : OG 1.056 ABV 6.2 SRM 4 IBU 30. I sense a little woodey or piney something in the beer so im adding a little more hops plus a flameout addition. adding decent amount of light crystal malt to try to achieve a little sweetness without sacrificing the color. probably gonna mash at 150 but try to stay on the cool side.
there is a kind of sour taste to the beer too so im not sure how to achieve that, but likely through yeast selection. still looking at yeasts...would oberon yeast be a candidate?
ogg tony suggests White Labs wlp500
aa on hallertau hersbuckler in this app was way different than german hallertau from the store so i bought too little hops. substituting east kent goldings a little in the bittering addition.
planning to add the sugar to minimal water (pint or two) bring to boil and boil down as much as possible. chill then add to fermentor on day 4 or 5. |

Notes: Ferment at 58° for 12-15 days then raise to 68° to finish. Drop to 40° for lager. Rack to keg or bottle.
Depending on taste at final gravity, may dry hop. Fast ferment taste was pretty hoppy, moderate bitter. 1.030 at 11 days.
Best beer I've made. Back off bittering hops a touch. Maybe add a bit of citra, columbus, cascade, or amarillo for depth at 0min. |
