Adjusted IBU to 19 based upon Wynkoop's site.
Initial tasting notes: Less smoke than the original, also the malt character, while close, differs a bit - I'm guessing due to the yeast being a different strain from the original. Its not major, but if anything its a bit lighter on the palate than the original. The finishing hops should be higher as well as this clone is less noticeable on the nose. One could up the specialty malt percentages and finishing hops, but personally, I like this one so much that I'm not planning on altering the recipe. |

Notes: We'll toast the centennial of the #ChristmasTruce with our own version of German-English-Belgian-influenced ale. The beer itself is designed to be friendly and accessible. It will have representative characteristics of flavor, mouth-feel, body, yeastiness, bitterness, and aroma that would have been familiar to everyone on the Belgian front line that Christmas Eve 100 years ago.
It should represent an un-melancholy and language-transcendent catalyst to reminisce about homes far away and provide a means to share connections with lands and people to which the men on both sides of the trenches dearly hoped to return.
It should have encouraged those who shared it to wish the best to their temporary comrades who, on the following day, dutifully went back to assuring that they never did return to those far away homes.
War is hell. Good beer shared with friends helps to remind us why.
Mash in at 145 for one hour
Fly sparge at 185 for 45 minutes with direct heat to 190 on boil kettle
Boil for one hour
Add dark candi syrup at 45 minutes

| Notes: Brewed 4/5/14. First time attempting something like this. Decided to batch sparge to try to save on time. Strike was about 173F and we hit about 149 in one mash tun and 151 in the other. I accidentally over estimated the sparge water since I just doubled the amount for 5 gal so we ended up having enough for the second beer also (meaning I estimated about 8gal over on the necessary sparge water). Didn't run into too many issues just a bit of a stuck original runoff but I sort of expected that. In kettle efficiency was very low at 59%. Brew house efficiency was way lower than expected. Not sure why. Possibly from using a lot of sparge water. Used some slurry and had to top off with some water to hit 5gal in each carboy. |

Notes: The boiling hops were ones I just had laying around, but still fit the style profile.
The total wort boil time is 60 minutes. Add the first hop addition as soon as the wort reaches a full boil and then start your timer.
Add Belgian candi syrup and Irish moss with 15 minutes left in the boil.
Provide the wort with plenty of oxygen before pitching to ensure a healthy fermentation
Chill the wort to 68 °F (20 °C) and ferment at 68 °F (20 °C) for the first few days until the main fermentation is complete. Then let it free rise. |
