I have had a crack at the water chemistry based on a Hazy IPA Target profile that I found.
1 gram Calcium Chloride
No Whirlfoc as you want it hazy
But adding in the normal yeast nutrient
It is not supposed to be very bitter, so no boiled hops as the bitterness will come from the APA can – 30 IBU
So steeping for 15 minutes at 75C for all hops.
Just need to play around with quantities of each.
I have just started the recipe on 15 grams of each hop type = 25.38 IBU
So total IBU = 55.38
Dry Hop after 5 days with 35 grams of each hop
Process would be:
Prepare your water volume (25L) as normal with Campden Tablet and bring to strike temperature
Add the Water treatment additions and yeast nutrient with the Flaked Oats and Mash for 30 minutes
Get Whirlpool going
Add LME can and top up with 1.5L of hot water to fully extract all the contents of the can.
Add DME
add hops and steep for 15 minutes
Chill to 20C
Transfer to Fermentor

Sean Lawson, owner of Lawson’s Finest Liquids, a small-batch brewery based in Warren, Vermont, shared this recipe for their Double Sunshine IPA, which is packed with juicy tropical fruit flavors and bright herbal aromas thanks to the abundance of U.S. grown hops.
ALL-GRAIN
Batch size: 5 gallons (19 liters)
OG: 1.074
FG: 1.013
IBUs: 100+
ABV: 8%
MALT/GRAIN BILL
8.5 lb (3.85 kg) 2-row pale ale malt
12 oz (340 g) Carapilsen malt
2.5 lb (1.1 kg) Vienna-style malt
1 lb (454 g) flaked oats
6 oz (170 g) Caramunich-type malt
HOPS & ADDITIONS SCHEDULE
0.75 oz (21 g) Columbus [14% AAU] at 60 minutes
1 oz (28 g) Citra [12.5% AAU] at 20 minutes
1 lb (454 g) corn sugar at 10 minutes
3 oz (85 g) Citra [12.5% AAU] at 5 minutes
3 oz (85 g) Citra [12.5% AAU] at knockout
3 oz (85 g) Citra [12.5% AAU] at dry hop
YEAST
Fermentis Safale US-05, Lallemand BRY-097, Wyeast 1056 (American Ale), or White Labs WLP001 (California Ale)
DIRECTIONS
Single infusion mash: Achieve a target mash of 152°F (67°C). Hold for 45 minutes, then raise to mash-out temperature and begin lauter phase.
Collect enough wort to boil 6.5 gallons (24.6 liters) and boil for 60 minutes, following the hops and additions schedule. After the boil is complete, begin a whirlpool in the kettle and let the knockout hops rest in the hot wort for at least 30 minutes before chilling.
Chill the wort rapidly to 68°F (20°C). Ferment at 68°F (20°C) for one week. Cool to 55°F (13°C) to settle the yeast. Dump the yeast from the bottom of the fermentor or rack to a clean, sanitized vessel. Add the dry hops and let the beer sit for an additional four to seven days at 55–57°F (13°C).
EXTRACT VERSION
Replace the 2-row and Carapilsen malts with 6 pounds (2.7 kg) of light liquid malt extract. Mix the crushed Vienna-style malt, flaked oats, and Caramunich-type malt into 2 gallons (7.6 liters) of water to achieve a temperature of 152°F (67°C). Hold at this temperature for 45 minutes.
Rinse the grains with 2.5 quarts (2.6 liters) of hot water, add the liquid extract, and bring to boil. Top off the kettle to 6.5 gallons (24.6 liters). Boil for 60 minutes, following the hops schedule and adding 1.5 lb (680 g) of corn sugar with 10 minutes left in the boil. Continue as directed above.

Notes: Tart Saison
- Mash all grains with 5 qts of water @ 150 degrees for 30 minutes, then batch sparge with another 3 qts of water.
- Add LME and then top off with water to the 6G mark prior to starting boil.
- Make a starter combo of Wyeast 3711/3724 seven days prior to brew day and pitch @ 68 degrees.
- Ramp temp 2 degrees per day until you reach 90 degrees. Once held at 90 for 2 days take you first SG reading.
- Continue ramping temp up to 95 degrees or SG of 1.014 is reached.
- Rack off to secondary, add 8 oz. Maltodextrin and pitch bug concoction.
- Ferment in secondary 30-90 days, until desired tartness level is achieved.
- Recommend using multiple bottle dregs from Sante Adairius or similar and doing an initial step directly in bottle @ 1.02, then stepping up in a flask with 1L @ 1.04, holding for a week or so as your secondary bug starter |

Notes: At bottling this tasted exactly like a classic English real ale - exactly what I was aiming for. The combination of Wyeast West Yorkshire yeast, Challenger hops, hard tap water with gypsum & CRS (see right), and a typical English recipe including 10% invert sugar has worked beautifully.
Mashing overnight in most of the liquor followed by very quick sparge in the morning gave 82% efficiency and a stronger beer than planned.
I used a whole 100g packet of Challenger hop pellets, adding most at 80 Celsius during the post-boil chill. All hop trub was tipped into the FV with the wort rather than being separated, as I would usually do. This has given the beer a very hoppy nose.
Hands down the best English style ale I've ever brewed and definitely one I will repeat. |

Notes: 90 minute boil with hops, adjuncts and nutrients as timed. Chill to 63F. Oxygenate slowly through 0.05 micron diffusion
for 90-120 seconds (we’re after 9-10 ppm O2). Ramp primary to 77F for 6-7 days. At 1.013 rack off yeast to secondary
and crash to 55-60F. Hold for 3-4 days until FG is reached. Dump yeast again and lower to 45F and hold for 8 weeks.
Bottle using heavy Belgian bottles or Champagne bottles. Prime with 33g/gal Simplicity Candi Syrup and repitch ½ cup
fresh krausen or a 500ml stir-plate WLP 530. Let bottle carb for 14 days at 76F. Cellar for 12 months |
