Notes: Supposed to be a modification of the last APA I made. I dunno if cutting out the crystal was a good idea but we shall see. I also added biscuit to see if I can't get a more bready flavor. I also toned down the 0 addition and switched the type of hop Going to mash at 151 to give it a little more mouth feel since lack of crystal grain. Hit 151 perfectly. Heat loss on strike was 15F. Temp dropped 3F over hour mash. Boiled for 70min because I forgot to put the wort chiller in at 10min. Decided to add in a little more hops because of the boil. Meant to be .5 cascade but turned out to be .7.

Notes: We'll toast the centennial of the ‪#‎ChristmasTruce‬ with our own version of German-English-Belgian-influenced ale. The beer itself is designed to be friendly and accessible. It will have representative characteristics of flavor, mouth-feel, body, yeastiness, bitterness, and aroma that would have been familiar to everyone on the Belgian front line that Christmas Eve 100 years ago.

It should represent an un-melancholy and language-transcendent catalyst to reminisce about homes far away and provide a means to share connections with lands and people to which the men on both sides of the trenches dearly hoped to return.

It should have encouraged those who shared it to wish the best to their temporary comrades who, on the following day, dutifully went back to assuring that they never did return to those far away homes.

War is hell. Good beer shared with friends helps to remind us why.

Notes: Single infusion mash at 151°F for 60 minutes. Adjust mash pH with lactic acid (target 5.3 pH). Lauter then boil for 45 minutes (cut 15 min short). After flameout, chill to 175°F and add whirlpool hops (10 minute contact time) hop addition. Knockout. Pitch yeast starter along with. Ferment at 68°F. Add dry hop at high krausen (day 2/3). Rack to keg and force carbonate to 2.6 vol. (5.2 g/L) CO2.

Notes: 1. 3/21 - Made 1/2 gallon 1.04 starter wort (Light DME). Divided into 2 growlers.

2. 3/22 - Made Lacto starter (5 days in advance of brew day):
- growler with 1/4 gal starter wort
- added 1/4 lb uncrushed malt grains
- fermented, odor of cooked corn by days 4-5

3. 3/25 - Made 2.5 gallons wort, DME, Wheat extract
- boiled 15 minutes

4. 3/25 Made cervesa yeast starter
- growler with 1/4 gal starter wort
- pitched 1/4 sachet of Danstar English ale yeast

5. 3/26 - Pitched lacto starter into wort at 80F (3/26)
- setup temp control - heating pad, towels, etc. - target fermentation temp of 90-100F
- took a base taste sample. Moderately sweet malty.

6. tasted daily until desired sour-ness developed. 5 days

7. 3/31
- skimmed lacto yeast trub from top of kettle fermenter
- 15 minute boil, with hops, irish moss per schedule
OG 1.04 @ 90F, 1.049 @ 60F

- made 1 L 1.04 additional wort; added to cervesa starter

Notes: Using frozen mango, let thaw completely before racking beer onto it.

The mango didn't really do anything helpful, so next time I'd probably make a mango syrup (blend mango into a liquid, add sugar and a little water, boil until thick, strain, add to secondary) to try to get more 'mango' flavor out of it.

In secondary, add vodka soaked:

4oz cacoa nibs
1 vanilla bean, chopped
1 cinammon stick, broken (2-4g)
2 dried ancho peppers, deseeded
2 pasilla peppers, deseeded
1 Guajillo pepper

Replaced Chocolate Rye Malt with same quantity of Chocolate Wheat.

Left in secondary for only 2 days. Was enough to give some nice heat. If I did it again, might leave in for 3.
