Notes: Made starter of WLP001 from pale ale brewed 2 months ago. Was in mason jar in sterile water in fridge. Starter only got going for ~16 hours.
Strike water was on the high end, shitty thermometer lead me to think I was mashing at 156-158F--not good.
OG was 1.060 at 80F
Pitched yeast at ~78F
First batch using temp controlled chest freezer. Set at 68F when it was supposed to be at 65F, started bubbling at 68F in ~4 hours, lowered to 65 12 hours after pitch...chugged along slowly for 1 day bubbling, lots of krausen but airlock activity stopped. Raised back up to 68F 48 hours after pitch to try and regain activity. SG 1.036 at this time.
Dry hopped with 1 oz of Falconer's Flight from Day 7 to Day 12.
Day 12, gravity down to 1.010 surprisingly.
Dry Hopped from day 12 to Day 14. Day 14 needed stainless steel boil kettle plug that I used to help weigh down the hop bag for the Crystal Wheat brew. Only dry hopped the 2oz FF for 2 days.

Bought a sack of Avangard Pils so subbing Weyermann Barke for that. Also picked up WLP029 for the first time in a while. And going to add some ascorbic acid in the mash for canning protection later. Also dialing back the magnum addition to 10 from 12 grams for bittering. 28 IBU to 24 IBU.
Oct '23 - After the Mustange I went back to OYL-044 and we oxygenated (1 min on setting 1 Blichmann oxygen regulator). It hasn't cleared as of typing, but it finished drier than before which makes the bitterness stand out a bit more. I think it tastes like a "weak" german Pils with some kolsch-like esters rather than a kolsch. Went shopping for kolsch to compare and could only find Reissdorf. Reissdorf has a lingering bitterness but comes across initially as sweet and fruity. I prefer the Gaffel that I've been able to find, it's a little more hoppy, but still has the strong white wine/grape notes that I enjoy in a kolsch.

Sep 2023 Last batch was really good with the Mustange. It took about a month, maybe 6 weeks for it to clear and then for the banana notes to subdue. Switching back to OYL-044 for batch 3 of v3 and keeping everything else the same.
Last batch was good, but the melanoiden was too much. Haze was definitely more in control than before and it wasn't nearly bitter enough. I wonder if the bitterness is dropping over time because the hops I've been using were from 2018. Kept frozen and vacuum sealed, but still "older". I've also been using a chloride heavy water chemistry and I'm going to shift more towards balanced. Gaffel has some sweetness, but finishes dry on the tongue.

Switching from OYL-044/WLP-029 to Mustange from BB for a go. "Lagerlike" suggests it might be cleaner than my usual, which is not ideal so will ferment on higher end.
I've made the original recipe about 13 times and it's been good to me. The last batch had a DMS issue due to a process problem, but I bought some Gaffel and Reissdorf and realized I was off more than I realized in terms of recipe.
Going to cut the wheat and vienna a bit, add some melanoiden to fake decoction a bit. Using WLP029/OYL-044, perle and tettnang for now. Keeping the ABV on the lower end, hoping for more clarity. Subbing out Barke for BoPils and watching my process more (collecting drips from the hood back in the kettle was the issue).

Updating with more recent ingredients I have on hand. Using OYL-044 more nowadays due to lesser WLP availability nearby Seems like the same yeast so far. |

Notes: Mashed with 5.5 gallons at 152 degrees for 60 minutes.
Sparged grains with 2 gallons of heated water to reach 7.5 gallons.
Pre-boil gravity was 10.51-1.052.
Increased boil time from 60 minutes to 90 minutes. Probably could have gotten away with around 75 minutes. My target fermenter volume should have been 5.5 gallons, but ended up being slightly less once the wort cooled.
Post-boil gravity was 1.066.
Cooled wort with immersion chiller down to 51 degrees in 24 minutes. Ambient temperature outside was roughly 41 degrees.
The color of the cooled wort is gorgeous.
The beer fermented for almost 7 days at a temperature ranging between 55-58 degrees. Days 2-6 were the most vigorous.
Sampled beer on day 7 and the gravity was 1.017!
Starting diacetyl rest on day 7 slowly taking beer up to 68 degrees. |

Notes: Mash and boil for 30mins
Add lacto to the grainfather when temp gets to 50degrees
Cover the grainfather with cling film and leave for 3 days.
When PH has dropped down to 3.6ph boil up for 60mins to kill off the lacto and add hops
sanitise the counterflow by running boiling worth through it.
Finish with Lime zest at 5mins.
add to fermenter warm rather than recirculation.
Bleach the shit out of the grainfather
Ferment the beer with cider or champagne yeast
Once fermented out, add cucumber juice to the bottling bucket and bottle. Let it do it's thing in the bottle.
Cucumber has 1.7grams of sugar per 100grams so work that into the priming calculations
Alternatively.
Mash and boil.
Ferment as normal.
Split with half on Watermelon an Mint Half on cucumber
Add Lacto to each fermenter.
Check ph drops then bottle |
