Notes: Really delicious Rosemary IPA, perfect with a roast lamb.
I normally dont bother with secondary, usually just throw in my dry hop addition about 3-4days into primary fermentation and let it do its thing for another 5 days.
make sure you thoroughly wash all of your rosemary, and even sanitize the dry hop addition for safety.
could also consider throwing in some lemon rind during fermentation or possibly even do it at flameout. |

Notes: This is an experiment in using koji as a starch converter for rice. In this beer, I'm adding a koji-rice starter and some steamed rice to my wort during primary fermentation.
For the purpose of recipe design, I've used flaked rice as a stand-in ingredient.
I'm using cheap ingredients to save time.
I'll be measuring FG and Final Brix to determine ABV.
Apparent Attenuation end up above 100% due to continued sugar creation in the wort, courtesy of koji |

Notes: add 2 oz bourbon soaked oak chips after primary fermentation let age until bourbon flavor is desired..add more if needed
then add tart cherries...age until desired flavor is reached.
I primed with brown sugar for bottling
3rd time filed in a freshly dumped Bourbon Barrel from Dark Horse. Sat in barrel for 3 months light pellicle formed. Funky and boozy. Transfer to a bucket with 2lbs of Tart Cherry puree for a week then kegged. |

Notes: A fairly close grain bill to authentic Irish stout... but I like chocolate so there you have it.
Named after my father's character of choice in the SCA, Lord Aegirjon of Cathanar.
1.5 starter used.
Fermented at 65F until FG is achieved... Normally takes 2 week or so.
Cacao in the secondary at 68F for 7 days or to taste...
Condition for 2 weeks minimum, and you shall have a fantastic chocolatey, creamy, dry Irish stout. |

White Labs WLP028 Edinburgh Ale, Wyeast 1728 Scottish Ale, or Fermentis Safale US-05
Use 7 grams of properly rehydrated dry yeast, 1.5 liquid yeast packages, or make an appropriate starter. Ferment at 65° F (18° C). When finished, carbonate the beer to approximately 1.5 to 2 volumes and serve at 48 to 52° F (9 to 11° C). Allowing the beer to cold condition around 40° F (4° C) for a few months will improve the beer. |

Notes: Pressure cooked wort 6 cups with 44 g Hallertau Hops, then added to main boil. Just before flame out added additional 44 g of Hallertau Hops (in nylon bag). Used immersion chiller, cooled to 70 deg. Aerated and left behind trub in boiler. Moved to 6.5 gallon Mini Brew Conical fermenter and allowed to settle and removed final trub via the 3/4 " bottom valve before pitching a very strong going yeast saved from last batch. Started fermenting within one day Started on 1-28-18 pH of 5.33 mash. Final Brix before pitching yeast O.G was 13.25 = 1.054 S.G. Used 3 gram of Calcium chloride in mash water, mostly distilled.
Beer filtered 2-1-18 through 5 micron. Beer pH on 2-10-18 is pH of 4.44. |
