Notes: 14 lbs of Apple Juice in the recipe gets to the actual OG (since no way to add volume of juices) - actual recipe is 1.5 gallons Apple Juice and 0.5 gallon Cranberry juice. Add pectic enzyme (for clarity) and wine tannin (for structure/mouthfeel/bitterness, since only using store-bought sweet apple juice. Can also add Acid blend as needed to taste) while pouring juices into fermentor to mix (shake to mix and aerate, as well). Use kveik and ferment at room temp (or hotter if you like!). After fermentation, back-sweeten after stabilizing (with K sorbate and Campden tablets) with 1.5 cans apple juice concentrate.

Notes: Racked to secondary after a week and let sit for 4 weeks. Changed out ice bottles each day in tub. Not sure how stable the temps were, just tried to keep it cold. It is delicious, lightly yeasty, drinkable ale but not as bright as I would like. I think people will like it though. Will make again over winter.

Notes: This recipe has produced excellent results. Classic Wit--a mousse-like, long lasting head, slightly cloudy straw color beer, a slight peppery taste and a hint of orange. Perfect for sitting outside and enjoying a warm summer breeze.
