Agua de lavado, agregue 9 Ml de Fosfórico. pH last run 5.9 Resultado final cocción: DI 1047. pH 5.4 Inocule levas a 22.6 °C. Bajo rápido a 15. A las 3 Hs se apago el combistato, subió a 18°C y volvió a bajar en 3 Hs Aprox. - Dia 2: El bulbo del combistato se despego y marcaba 27 °C... Realmente estaba a 11°C. Si bien había actividad, veremos al final de la fermentación el resultado. - Dia 3: Siguen los problemas... se rompió el bulbo del combistato... Subió unos grados la temp... - Dia 5: Libere la temp hasta 18°C - Dia 8: Comencé cold crush. Hoy bajo a 10°C - Dia 9: Bajo a 1°C. La heladera no para de trabajar. Le meto CO2 desde ayer para compensar volumen de head space y no entre oxigeno. Dia 13: Paso a Barril. Cosecho levas (Un desastre...) Dia 15: Realmente mejoro la cerveza al bajar la carga de levas en suspensión. Ahora fría y con CO2, se va clarificando de a poco. Dia 17: Sigue mejorando en aroma y sabor. La espuma es muy densa y consistente. De a poco se va clarificando.

Previous mash was at 152 for 60 mins. with 168 for 15 mins. 122(20m), 144(30m), 156(20m), 168(10m) and sparge water 4-24-2021 dumped the step mash and did a no sparge to see the difference. 9-27-2021 - Dropped .5 oz of hallertaur at 60 mins and switched out the .5 hallertaur at 10 min for 1 oz of Tettnanger.

Rehydrated at about 30c. This beer is inspired by Hobgoblin ale in the UK our local active volcano, Sakurajima. Wychwood describe Hobgoblin as a Ruby Ale, hence my borrowing of the term here. However, without EKG hops and British malts, it won't be a clone. Sakurajima is the volcano in the profile picture. It is active, so the ruby colour is also nod to the lava that is due to come out of it soon... Brewed on 26/11/2017. OG 1.050, so spot on, but with 8 litres, not 9. Can't have it all, nevermind. just bottled on 20/12...took a long time to finish. With gravity readings ended up bottling 7.5 litres, 18 bottles of mixed sizes. All good though. Another two weeks and I'll be drinking it. Very, very nice. Rich malty complexity with a little chocolate. Quite sweet, but not overly so. Very surprisingly close to Hobgoblin, only a little darker with roasted flavour. At only 11 days its not at its best either.

Rahr White Wheat: 7# 2. Gambrinus Pilsner: 2# 3. Centennial (pellet): 1oz 4. Safale US-05 (11.5 gram) 5. Priming Sugar (table sugar): 5oz Mash as you would normally. Haven't used rice hulls yet and haven't had a stuck sparge. Head the strike water to around 170, and pour over the grain bed. Rest for 60. Did not do a mash-out, and personally don't think this beer needs it. Sparge at ~170 deg. Boil for 90 min. Add Centennial hops at 30 minutes to keep IBUs down as they can easily overpower the light body. Cool and pitch US-05 (create starter night before or morning of brew day) once down to around 70. Fermented this in primary for 7 days (active fermentation was done in 3), and bottled. Bottle conditioned with 5oz table sugar for one week and started drinking. Beer was excellent and 1.5 weeks in the bottle. Mellowed some with another week or two, but for the wheat and hop bite, best drank before 3 weeks. This was a hit, even with the bottle cap issues we had regarding consistent carbonation. This is our new household staple.
