Start time 12 pm
Target mash temp 154, strike temp ~165. Preheated mash tun with 3.75 G of 171 deg water (5 minutes). Liquor treated with 5g of gypsum+calcium chloride, and 3 ml of lactic acid. Doughed in to achieve rest of 152, let rest for 60 minutes, stirring every 15 minutes.
While brewing we packaged the previous batch (42) of remnants. We are packaging 2.4 gallons of aged Remnants batch 2, targeting 3.35 volume of Co2 with 93 g of corn sugar added to keg. Beer was pushed with CO2 through a racking cane into purged/sealed keg with priming sugar inside. Headspace was purged after.
Vorlaufed 13 minutes, before collecting 2 G of first runnings. Sparged with 5.6 gallons of 172 deg water.
Vorlaufed 10 minutes before draining directly into kettle, pre boil volume of 7 gallons. Boiled with heat stick and ultra burner on 5, added hops at recipe times.
Rapidly cooled with copper immersion chiller to 70 deg over 30 minutes. Transferred hard through spout/hose to 6 G glass carboy. Transferred cake from Remnants (2) after shaking.
OG: 1.050

(Optional stepped mash: beta-amylase @145 for 15 min, alpha-amalyse @158 for 15 min, mash out @167 for 10 min.)
Ferment under pressure (15 psi max) at 65-70 F. Wait a couple extra days for diacetyl rest to finish. Rack to keg and chill into the mid 30's F. Add gelatin (after preparing per instructions). Purge CO2 from head space. Force carbonate for at least another day.
Gelatin Instructions: Boil 1/4 cup water for a few minutes to sanitize it. Allow to cool a bit (<~170 F). Mix in 1/2 tsp gelatin. |

Notes: Single infusion mash: Achieve a target mash of 152°F (67°C). Hold for 45 minutes, then raise to mash-out temperature and begin lauter phase.
Collect enough wort to boil 6.5 gallons (24.6 liters) and boil for 60 minutes, following the hops and additions schedule. After the boil is complete, begin a whirlpool in the kettle and let the knockout hops rest in the hot wort for at least 30 minutes before chilling.
Chill the wort rapidly to 68°F (20°C). Ferment at 68°F (20°C) for one week. Cool to 55°F (13°C) to settle the yeast. Dump the yeast from the bottom of the fermentor or rack to a clean, sanitized vessel. Add the dry hops and let the beer sit for an additional four to seven days at 55–57°F (13°C). |

currently im thinking since ive done the whole hazy NEIPA thing, might be cool to hop the crap out of this but try to make it head retentive and clear af. whirlfloc and cold crash. drop the oats. if i drop the wheat too then i should add some carafoam or something to help the head but that wont contribute to haze....
also will wanna use 1056 or maybe even try the steam yeast |
