Notes: Get 96c of water at 161 degrees and mash for 90 minutes (Mash temp 151). Drain wort. Add 30c of water at 175 degrees for sparge/mash-out. Drain wort. 90-minute boil adding bittering hops straight away. At 10min, add flavor hops/Irish moss. Cool to under 60 degrees. Pitch White Labs WLP830 German Lager yeast
Lagering: Ferment at 49 degrees for 1-2 weeks. Syphon into secondary container. Begin lagering at 50 degrees and steadily increase temperature to 65 (cellar temp) over 2-3weeks. After that, bring beer to 65-70 degrees for 3 days (diacetyl rest). Transfer to keg and age at 34-35 degrees for another few weeks.

Notes: Dough-in at 111° F (44° C) and hold for 15 minutes.
Ramp up to 131° F (55° C), and rest 10 minutes.
Pull thick decoction and slowly heat to 158° F (70° C), and rest 20 minutes. Boil 10 minutes, stirring constantly.
Meanwhile, ramp main mash up to 149° F (65° C) and hold.
Recombine, and equalize at 158° F (70° C). Rest for 10 minutes.
Mash out at 170° F (77° C).
Chill to 58° F (14° C) before oxygenation and pitching.
Primary fermentation at 65° F (18° C). |

Notes: Partial wort souring:
1. Prepare 2 litres of wort from 400g of the pilsner malts three days prior brewing (marked separate on the grain bill).
2. Boil the wort and pour into sterilised erlenmeyer flask.
3. Let the flask to cool to +50C.
4. Throw a generous handful of uncrushed pilsner malts into the flask.
5. Cover the flask with sterilised aluminum foil. Seal with rubberbands.
6. Keep the flask temperature between 40-50C for three days.
7. Pour the soured wort into a small kettle and boil for 10 minutes.
8. Add to the main wort when brewing. |
