Notes: I had a dream about making a beer like this. So this recipe is a product of that dream. A rich, red, imperial style ale that's not so bitter as is traditional for a strong ale. Thick head with long retention. Hope it turns out like it did in my dream!
I will be remaking this in the builder on Picobrew since I'm using a Pico Z to make it.
Notes to follow first brew.
OG from first brew: 1.069 - .02 lower than calculated on the z builder. Be sure to mix your oats in well. My oats weren't distributed well enough.
FG 1.022. 6% ABV. Very wet, delicious, but not what I wanted gravity wise. That and it is not boozy enough... Going to drop the mash temp to 154 to dry it out a little.
I may have cold crashed too soon. We had some weird temperature changes that made it hard to regulate, even in a converted freezer with a dual control inkbird. 90+ degrees in the day, 24 at night for a week.
Brewing again in a few weeks. |

Notes: Mashing is a straight forward single infusion at the lower end of the saccharification temperature range, (around 63C) so that you get more fermentables and a lighter, crisper body. dont mash up hoter than 73C
about 15 minutes left in the boil, add the sugar to the wort and stir until it is completely dissolved, being very careful that it doesn’t scorch your brew kettle.
First, an initial gravity above 1.060 makes your yeast work very hard. They are tired, worn out, and old by the time fermentation is complete. This isn’t to say they don’t have enough umph left to bottle condition (they probably do), but it isn’t a bad idea to cast new yeast when you get ready to bottle the beer (This would fall under optimum practices). |

"3rd day nudge the temp controller to 18C (64F), and then slowly began to raise the temp up over the next few days until 68F on day 7. At one week pretty much all activity ceased, and I tossed the first hop addition into the primary for four days. Then I racked the beer into a keg (secondary), added the second dose of dry hops, and purged with C02. I’m playing around with one of those Dry Hoppers from Stainless Brewing. So far it’s working well, and hop utilization seems good. I can easily pull out the old dry hops, and it’s easy to clean and sanitize. The next two additions went in four days after each other, purging with CO2 every time I cracked the lid on the keg. Lastly, I fined with gelatin, and carbed the beer." |
