Notes: 6.75 gal heated to 186. Dropped to 176 then stirred to 165. Dough in with additional temp drop to 151. Stirred until 149.5. PH was 5.4. Fell on its own to 148.3. Added another qt of boiling water ZERO change. Continued to reduce to 147.2. In the future let it go at 1.5 to 2 above final target.
8.5 gal collected into boil kettle after allowing mash tun to drip for 30 more minutes. Boiled for about 75 min. 5.75 gal into fermenter at 1.075. Forgot Clarifying tablet.
After 16 days 4.8 gal of beer (50 bottles) was packaged in Belgian bottles with 10 oz (283 grams of sugar) along with a small Kveik yeast starter to assist in rapid carbonation and stored at 78° for a week. |

Notes: For next time, mash at 5F hotter in order to get the mash into the mid-150’s, for a residual sweetness from the malt. When kegging, add 1T of fresh grated ginger.
** 11/23/19 My efficiency may have been affected by either: the mash temperature or the ph of the mash. The mash temperature came out way lower than I expected. I added 1 qt. of boiling H2O in order to raise it up to 147F, which is about 9F less than I wanted. The honey is going to be added after 1 week in the primary, in order to spund and age with the beer. The oak will be in the primary, so it will only get 1 week of oak. The yeast starter is 1.5 qt. There was extra wort in the mash tun and in the boil kettle, that would not fit in the fermentor, so I re boiled and have a 1/2 gallon of 1.068 winter saison running alongside this ale. |

Notes: Probably won't be bitter enough, note to self; change the hop profile, add the hallertau later, use something else for bittering.
- As expected, hops were a little low in intensity.
- Early tastings were very banana, and alcohol, it really just tasted like some weird banana liquer or something. 5 months later the initial "I'm drinking straight alcohol" mellowed into a very smooth tasty beer. Banana flavours have also mellowed. It's become a favourite at parties, where I'll pour 1 600 ML bottle into 3 wine glasses. Carbonation also really only became apparent after about 4 months, my storage area is generally between 20-23C in summer. |

Notes: 30L starting water; preboiled to reduce bicarbonate but not much residue - poss not enough boiling and agitation time. next time add slaked lime, as boiling took too long anyway. added 3tsp CaCl and 1tsp MgSo4
split 20L for mash and 10L for sparge
20L strike water 70C for mash temp of 66
mash 66 for 60mins
sparge water 75C (set kettle at 70 to get 75; need to recalibrate)
boiled only for 30mins b4 hops additon as wanted some hot break for haze and litle more volume for fermenter after trub (large last time)
whirlpool for 20mins at 80C with 100g citra
postboil reading 23C 1056 so adjust temp +0.0016 so 1057.6
pitched around 6pm at 25C, hot day so couldn't get much lower before going into fermnter set at 18C
24hrs later VERY active fermentation, no blow over but boiling-like bubble frequency. 48hrs post pitch this slowed dramatically so took reading with tilt thermometer and it read 1005 at 20C so about 1006, seems too low. Added 1st dry hop
Dry hop twice 50g citra, each for 3 days contact, first 2 days after active fermentation
Gravity 1022 at 17.5C at day 5 post fermentation, all activity stopped. Tastes great though. Added other hop addition, swirled a little and increased temp to 22 for the next 3 days.
At 1020/2 after extra 3 days. Doesn't seem to be budging so bottling up. Carbed to 2.0vol, 4g/L so 96g in 500ml for 32 750ml bottles 24 lts. However only 21lt in fermentor, so added around 75g of it and bottled 21 bottles in end, quite a bit of yeasty beer left at end
